Moutarde Reinvents the Carvery  Undoubtedly, the centerpiece and core of Moutarde's dining experience will be its live carvery station—a mouthwatering and captivating display where whole wood-fire roasted cuts are expertly sliced with precision and flair. Inspired by a memorable early 1990s London experience with the classic British carving trolley, Chef Paul is crafting his own unique take on this quintessential dining concept at Moutarde, debuting it here in Singapore.  Sharing great food in a convivial atmosphere is central to Moutarde, and the carvery, which changes daily to ensure a unique experience each time, features large cuts from Australian Prime Rib and New Zealand Lamb Leg to XXL Turbot. The meats are carefully selected and stored in an impressive glass-walled maturation room within the restaurant, offering guests a glimpse into the slow magic as these showstopping cuts await their turn.  Each day, chefs choose the cuts for the carvery, using their skills to roast, braise, grill, steam, or slow-simmer the meats before expertly carving them at a large wooden station, accompanied by a wood-fired oven, for guests to savor at their tables. A selection of freshly prepared 'moutardes' (mustards) and condiments is available and served table-side et voilà —the universal experience of good food, shared moments, and warm memories with friends is complete.  Relaxed yet Refined French but Service-Centric Moutarde will offer four unique dining experiences: Weekend Brunch, Lunch, Afternoon, and Dinner, each featuring variations of the full menu. Meals begin with a selection of dishes shared in the traditional French style. Soft and smoky Grilled Piquillos, Eggs Mayonnaise, and freshly made Tarama are served with lightly toasted sourdough and bread. The Pâté De Campagne and Charcuterie Board provide the simple pleasure of enjoying rustic French artisanal cold cuts while catching up over the first drinks of the evening. Guests may also start with a light Cheese Soufflé and share classic French hors d’oeuvres like Charred Leeks, Rostbif “Carpaccio,” and La Salade Parisienne. The restaurant’s elegant Oyster Bar offers a curated selection, primarily from Brittany, along with house jasmine tea Smoked Salmon.  The centerpiece Carvery will feature dishes that change daily, based on the Chef’s selection from the maturation room and seasonal availability. Additionally, the menu includes bistro classics such as Beef Tartare Tradition, a deliciously simple Minute Steak Frites, Grilled Lamb Chops with aïoli, jus, and french fries, Rôtisserie Chicken, and a comforting ‘Buntut’ Indonesian Oxtail Soup served with Mandarin rice, sambal, and emping crackers—an unexpected favorite of Chef Paul. From the sea, guests can savor Grilled Seabass Vierge with pastis aïoli or Grilled Salmon Béarnaise, served perfectly tender with just the right amount of crisp on the skin, accompanied by spinach and fragrant grilled asparagus.  A Wine Programme by Xavier Thuizat  At Moutarde, Chef Paul Pairet has collaborated with Xavier Thuizat, one of the world's most renowned sommeliers—Best Sommelier of France 2022, Meilleur Ouvrier de France 2023, and recipient of the Michelin Guide Sommelier Award 2024—to create a wine program that blends expertise with conviviality, offering guests an accessible way to explore wines in the relaxed atmosphere of good food and company.   In addition to a meticulously curated cellar, guests can enjoy a distinctive wine-tap wall and two wine tanks, enabling wine to be served at the table by the carafe. Dining Experience We relished breakfast at the Amaya Food Gallery, savoring special dishes of simple home-cooked comfort food like Penang Nasi Lemak and Lontong, all crafted in a Penang-centric style. As their signature all-day dining venue, Amaya Food Gallery offers a blend of east-meets-west international cuisine, popular local favorites, and Thai-infused selections in a street market-inspired setting with a live kitchen. The Cellar, a private dining wine room, provides a curated set menu and can host up to 12 guests, making it perfect for intimate gatherings. Amaya Terrace offers an ideal sit & chill alfresco dining experience amidst the tropical gardens, and perfect oasis to chill, during the evening. For dinner, we enjoyed a unique first-ever Thai collaboration between Amari SPICE Penang with Chef Sahadol Tantrapim “Pond,” a MasterChef Thailand Season 3 and MasterChef All Stars 2019 finalist and the creative force behind Khaosan Tapas Bar, in Georgetown, in Penang. We completely immersed ourselves in Thai culinary taste and culture, relishing the authentic flavors of his signature Thai creations, such as Larb Kua, Khao Soi, Pla Rad Prik, and Ma Muang. So delicious! Spa Therapy & Treatment We're well-acquainted with the Breeze Spa brand, from our previous wellness encounters, which we consider a crucial element of the entire Amari-based wellness theme and hotel experience. We looked forward to our spa treatment and upon entering this modern retreat, we embarked on a sensorial holistic journey, starting with a welcome drink comprising of Blue pea and Lime, and a body assessment to identify areas needing attention in our spa routine, from the very attentive Spa team coordinator, Silinva. There were two of us, so we opted for two different mood massages, each lasting 60 minutes. I chose the Rejuvenated spa massage , an aromatic treatment using techniques with carefully selected essential oils to accelerate the elimination of toxins accumulated from stress, pollution, and a hectic lifestyle. I appreciated it because it left me feeling and looking radiant, invigorated, and ready to face the world, and I felt truly relaxed after my session. Simply Wonderful! My partner selected the Energised spa massage , a traditional Thai massage featuring a blend of ten traditional Thai herbs in a warm herbal compress that exuded earthy aromas and healing properties. After being stretched and experiencing the proper Thai kneading techniques to release tension, there was a profound recovery throughout the body and a surge of positive energy, immaculate in all dimensions! After the massage, we returned to the reception area, where we enjoyed another delightful, relaxing tea and engaged in a lively discussion about our spa routine and post-treatment feedback. Inspired by the core foundation for wellness, Breeze Spa is a sanctuary of natural beauty and splendor that awakens the senses and revitalizes our bodies. Breeze Spa is a highly recommended must-visit relaxation spot when visiting Amari SPICE Penang. Events - Meeting Spaces Amari SPICE Penang is an ideal venue for vibrant events, as evidenced by the fact that all their meeting rooms were occupied during our visit. This underscores their prime location for appealing to the corporate sector, whether for full-day meetings, conferences, company retreats, annual dinners, or weddings. Whether you’re an experienced wine enthusiast or just curious, explore at your own pace: 30 ml tasting pours — perfect for sampling a variety, and for this, I tried some of their wines from China, a new region for me, and the result was just fascinating! 90 ml full pours — ideal once you’ve found your favorite, so we loaded up on our favourite red wines once we knew what we wanted, in my case, it was the Huwei! I also enjoyed the Viu Manent Reserva! They now also incorporate a 33rd item which is a bubbly, so that's indeed very special, to top off the entire wine-drinking experience! Their concept is simple : Sample and Taste 32 Wines all within 2 Hours, from their 32-tap self-pour wine wall with RFID wristbands; so you get to tap, pour, and taste at your own pace, choosing between: ● 30ml tasting pours or ● 90ml full pours, all for S$59++ Vinflow offers authentic, high-quality wines on tap, including selections that retail for up to $150, all chosen by certified sommeliers for a comprehensive tasting experience. We also love their Rioja Tempranillo Reserva which is aged to perfection, oak-kissed. We started with the Charcuterie Board, which included Cheese of the Day, Cold Cuts of the Day, Dried Fruits, Jam, Olives, and Crackers. Then we enjoyed Grandma's Burrata Salad, a mix of Cherry Tomatoes, Arugula, Black Olive Leaves Dressing, and Walnuts, which pairs wonderfully with any Chardonnay! The Chili Crab Croquette, featuring Chili Bechamel, Citrus Aioli, and Ikura, blended perfectly with our Shiraz, while the Crispy Oyster with Tobiko and Citrus Spicy Aioli also met our taste expectations. Next was the Sausage Duet, which is my guilty pleasure, as I always enjoy the Wagyu Sausage, Bratwurst, and Maple Mustard Jam with red wine. To finish, we had the Spicy Thai Basil Mussel Pasta, with Mussels, Iberico Pork Minced, Holy Thai Basil Spicy Sauce, Orecchiette, and Onsen Egg, all marinated and cooked to perfection. The annual flagship event in Singapore will bring together global energy leaders from October 27-31, 2025, at the Sands Expo and Convention Centre to discuss the challenges and opportunities in the fast-changing energy landscape. The Singapore International Energy Week (SIEW) is an official trademarked event by the Energy Market Authority (EMA). It serves as a yearly platform for energy experts, policymakers, and commentators to discuss and exchange best practices and solutions in the global energy sector. Singapore Energy Lecture In his 2025 Singapore Energy Lecture, Minister for Manpower and Minister in Charge of Energy, Science & Technology, Ministry of Trade and Industry, Singapore, H.E. Dr Tan See Leng linked Singapore's next energy chapter to SG60. Sembcorp unveils landmark clean energy initiatives on Jurong Island: Expanding Singapore's largest utility-scale energy storage system vertically marks the first time an operational ESS has increased capacity without enlarging its land footprint. Utilizing its engineering expertise and innovative design, Sembcorp has increased the system’s capacity from 285MWh to 326MWh.  The Sembcorp Jurong Island Solar Farm, Singapore’s largest ground-mounted solar project at 118MWp, covers six unused industrial land parcels and produces enough clean energy to power approximately 33,200 four-room HDB flats annually. It demonstrates Sembcorp’s capability to transform unused land to support Singapore’s renewable energy objectives under the Green Plan 2030.   Envisioning Energy Tomorrow, Building Systems Today Today's energy systems are rapidly evolving due to technological progress and economic shifts.
