Moutarde and Sundae Royale - two uniquely complementary dining concepts - debut at Weave, Resorts World Sentosa (RWS) this weekend. Moutarde showcases culinary artistry, bold flavors, and precise technique in a relaxed French style. As a casual yet sophisticated bistro, Moutarde provides diners with an accessible way to enjoy the chef’s distinctive flair. It’s a venue where quality ingredients blend with an easygoing atmosphere, ideal for casual gatherings, weekday dinners, or leisurely weekend lunches.
Beside this French casual bistro is Sundae Royale ice cream parlour, offering delightful freshly churned soft-serves and sundaes, churros, and French toasts, with a nostalgic touch. Both venues mark the eagerly awaited entry of world-renowned Chef Paul Pairet into the Singapore dining scene. Together, Moutarde and Sundae Royale enhance Weave’s expanding array of global culinary experiences, curated by RWS to celebrate craftsmanship, creativity, and connection.

Profile
Paul Pairet, a visionary chef with an international background, was born and trained in France. He honed his skills in various cities around the world, including Perpignan, Paris, Hong Kong, Sydney, Jakarta, and Istanbul, before making Shanghai his home in 2005. In May 2012, he introduced his most notable creation: Ultraviolet. Since 2017, this restaurant has consistently earned three Michelin stars and has been featured on both The World’s 50 Best Restaurants and Asia’s 50 Best Restaurants lists. With the same enthusiasm, Chef Paul has developed and led more casual and accessible concepts, such as the classic seafood and steakhouse Mr & Mrs Bund and the French café-bistro Polux in Shanghai, as well as the lively grill Nonos & Comestibles at the Hôtel de Crillon in Paris.

Moutarde • A Fresh Take on French Casual Dining
Moutarde exudes a relaxed and genuine French charm with its warm lighting, the sound of clinking glasses, and tables designed for gathering. Drawing inspiration from the welcoming atmosphere of contemporary Parisian bistros, Moutarde embraces rich flavors and simple joys, offering whole cuts, comforting sides, and beloved French classics in a vibrant, easygoing environment. Guests are encouraged to stay a bit longer, share generously, and enjoy simple pleasures executed to perfection. This is French dining at its most relaxed and heartfelt, featuring a lively ambiance, comforting dishes, and an experience that is distinctly Pairet. Moutarde Reinvents the Carvery
Undoubtedly, the centerpiece and core of Moutarde's dining experience will be its live carvery station—a mouthwatering and captivating display where whole wood-fire roasted cuts are expertly sliced with precision and flair. Inspired by a memorable early 1990s London experience with the classic British carving trolley, Chef Paul is crafting his own unique take on this quintessential dining concept at Moutarde, debuting it here in Singapore.
Sharing great food in a convivial atmosphere is central to Moutarde, and the carvery, which changes daily to ensure a unique experience each time, features large cuts from Australian Prime Rib and New Zealand Lamb Leg to XXL Turbot. The meats are carefully selected and stored in an impressive glass-walled maturation room within the restaurant, offering guests a glimpse into the slow magic as these showstopping cuts await their turn.
Each day, chefs choose the cuts for the carvery, using their skills to roast, braise, grill, steam, or slow-simmer the meats before expertly carving them at a large wooden station, accompanied by a wood-fired oven, for guests to savor at their tables. A selection of freshly prepared 'moutardes' (mustards) and condiments is available and served table-side et voilà—the universal experience of good food, shared moments, and warm memories with friends is complete.
Relaxed yet Refined French but Service-Centric
Moutarde will offer four unique dining experiences: Weekend Brunch, Lunch, Afternoon, and Dinner, each featuring variations of the full menu. Meals begin with a selection of dishes shared in the traditional French style. Soft and smoky Grilled Piquillos, Eggs Mayonnaise, and freshly made Tarama are served with lightly toasted sourdough and bread. The Pâté De Campagne and Charcuterie Board provide the simple pleasure of enjoying rustic French artisanal cold cuts while catching up over the first drinks of the evening. Guests may also start with a light Cheese Soufflé and share classic French hors d’oeuvres like Charred Leeks, Rostbif “Carpaccio,” and La Salade Parisienne. The restaurant’s elegant Oyster Bar offers a curated selection, primarily from Brittany, along with house jasmine tea Smoked Salmon.
The centerpiece Carvery will feature dishes that change daily, based on the Chef’s selection from the maturation room and seasonal availability. Additionally, the menu includes bistro classics such as Beef Tartare Tradition, a deliciously simple Minute Steak Frites, Grilled Lamb Chops with aïoli, jus, and french fries, Rôtisserie Chicken, and a comforting ‘Buntut’ Indonesian Oxtail Soup served with Mandarin rice, sambal, and emping crackers—an unexpected favorite of Chef Paul. From the sea, guests can savor Grilled Seabass Vierge with pastis aïoli or Grilled Salmon Béarnaise, served perfectly tender with just the right amount of crisp on the skin, accompanied by spinach and fragrant grilled asparagus.
A Wine Programme by Xavier Thuizat
At Moutarde, Chef Paul Pairet has collaborated with Xavier Thuizat, one of the world's most renowned sommeliers—Best Sommelier of France 2022, Meilleur Ouvrier de France 2023, and recipient of the Michelin Guide Sommelier Award 2024—to create a wine program that blends expertise with conviviality, offering guests an accessible way to explore wines in the relaxed atmosphere of good food and company.
In addition to a meticulously curated cellar, guests can enjoy a distinctive wine-tap wall and two wine tanks, enabling wine to be served at the table by the carafe. A selection of perfectly balanced cocktails, both alcoholic and non-alcoholic, will also be available directly from the tap wall behind the bar.
Sundae Royale • Retro Soft-Serve
Sundae Royale, situated right next to Moutarde, is Chef Paul Pairet’s creative space for soft-serve ice cream and desserts. Capturing the simple and nostalgic flavors of childhood sundaes, Sundae Royale offers a premium, playful twist on artisanal smooth ice cream. All mixtures are freshly made in-house, using original recipes crafted by Chef Paul Pairet, who brings his precise approach to both popular and personal favorites.
The Sundaes collection includes several lines: Simple Sundaes, Sundaes Liégeois - topped with homemade Chantilly - and Sundaes Crunch. Caramel-Butter-Soy Ice Cream, Pistachio-Cherry Sundae, Mango-Raspberry Melba, Strawberry Trifle, Chocolate Liégeois, and many others are freshly churned from original recipes developed by Chef Paul Pairet, ensuring each one offers the perfect texture, flavor, crunch, and topping. This is a rare chance to enjoy a classic childhood favorite elegantly crafted by a world-renowned chef, as Sundae Royale introduces something new and unique to Singapore.
Guests at Sundae Royale can also savor Chef Paul Pairet’s iconic Real French Toast - caramelized on the outside, soft and comforting on the inside, served with soft-serve ice cream. Freshly made Warm Churros, dusted with sugar and accompanied by a mini ice cream, provide the ultimate comfort, while a classic selection of coffees complements a variety of homemade pastries and viennoiseries for those seeking a touch of the classic French café.
