Valrhona - Guanaja • 40 Year of Exploring Chocolate
Forty years ago, a bold new creation ignited a revolution in dark chocolate. With Guanaja 70%, Valrhona charted new territory for chocolate that was more intense, more technical, and more demanding. Four decades later, this iconic product continues to inspire professionals and embody the pioneering spirit of Valrhona.
In 2026, Valrhona celebrates not a static past, but a dynamic, evolving legacy. It belongs to a chocolate that has transformed practices, established new standards for quality, and expanded the boundaries of flavor by introducing connoisseurs’ palates to a precisely controlled bitterness that has become an industry benchmark.
The story of Guanaja begins in Tain-l'Hermitage, located in the heart of the Rhône Valley. At that time, Antoine Dodet, Valrhona's visionary managing director, posed an unprecedented challenge to his team: to craft a dark chocolate with an intensity never before achieved, proudly featuring a 70% cocoa content on its label, which was a groundbreaking concept at the time. This ambition required a complete overhaul of the creative process.

Valrhona began to adopt a methodical approach to sensory analysis. Much like how a perfumer creates a fragrance, Valrhona blends its fine cocoas. Guanaja was designed as an aromatic blend rather than just a simple combination of origins. It combined five, sometimes six, cocoas from South America, the Caribbean, and Africa, chosen for their complementary spicy, fruity, bitter, tangy, vanilla-infused, or roasted qualities. Each batch of beans is carefully selected by Valrhona’s sourcing experts, who establish direct, long-term relationships with producers. The batches are then blind-tasted by experts to evaluate their potential and guide the creation of a complex, well-balanced, and instantly recognizable blend. It is this approach, driven by passion and the highest standards, that crafted a “signature” flavor of rare complexity.
The creation of Guanaja involved more than just selecting the finest cocoa beans; every stage of its production was reimagined with precision. New machinery, roasting tailored to each origin, fine-tuned temperature charts, and extended conching all became part of the process, along with the increased cocoa content. This technical revolution revealed a unique aromatic profile.
In 1986, after months of experimentation, a new kind of chocolate was born, one that was intense, bitter, and robust yet subtle, lingering on the palate like none before. This new chocolate—the most powerful of its time—opened up previously unexplored creative possibilities. A name worthy of this discovery was needed. It was to be Guanaja, a name inspired by a distant, windswept island in Honduras where Christopher Columbus is said to have tasted cocoa for the first time.
This distinctive chocolate swiftly became a unique platform for experimenting with ideas in schools, competitions, and kitchens. Forty years on, Guanaja continues to inspire chefs worldwide. It remains a preferred ingredient for creators, as its composition and intensity unlock new creative opportunities (including contrasts, textures, meticulously controlled bitterness levels, and aromatic nuances), making it an essential ally for professionals seeking uncharted culinary territories.
Guanaja introduced a new dialogue: one that addressed cocoa content, bitterness, aromatic strength, and balance. This more precise, almost scientific, approach was initially embraced by professionals, then by the broader public. The iconic box of 18 squares, launched in 1986, introduced the public to a bitterness they had never encountered before and an aromatic complexity that challenged all their previous notions, creating a connection between haute cuisine and passionate amateurs.
In celebration of its anniversary, Valrhona honors this icon with a sculptural creation crafted from Guanaja chocolate, envisioned as a wild landscape symbolizing its strength and complexity. This signature piece was conceived by David Briand, Meilleur Ouvrier de France in pastry and confectionery and executive pastry chef at L’École Valrhona, who also shares his birth year with 1986. The material speaks for itself through its use of relief, layers, and textures, offering a genuine celebration of chocolate in its purest form.
For four decades, Guanaja has been at the forefront of flavor innovation, propelled by a daring spirit of exploration, experimentation, and relentless creativity that characterizes true pioneers. It has reshaped the standards of dark chocolate, supported generations of professionals, and inspired creators' imaginations.
Today, it remains a symbol of boldness and excellence, continuing to open new creative pathways for the future. Guanaja has consistently evolved with those who work with it. Its journey doesn’t conclude with this anniversary, as there are still new textures to create, aromatic combinations to imagine, and creative realms to explore. With Guanaja, the journey of discovery continues.
