Garibaldi • August 2026 Tasting Experience

Garibaldi's culinary style is traditional Italian cuisine tailored for Singapore's luxury dining audience. It blends classic techniques, high-quality ingredients, elegant presentation, rich flavors, an established wine culture, and a selective Southeast Asian influence. Garibaldi’s dishes convey their worth through taste and texture, focusing less on radical experimentation and more on confidently preserving Italian tradition while incorporating luxurious ingredients, modern presentation, and local flavor nuances.



Since its opening in 2003, Garibaldi has been a prominent name in Singapore’s Italian dining scene for over two decades. Its cooking is based on recognizable Italian dishes and techniques rather than an abstract "European" style. The menu highlights pasta, risotto, seafood, veal, beef, Milanese dishes, ossobuco, tiramisù, and other offerings rooted in northern and broader Italian culinary traditions.


The restaurant provides a comforting form of luxury: sophisticated yet comprehensible, refined but not overly formal, traditional yet dynamic. Its lasting relevance stems from making Italian dining feel both authentic and comfortably integrated into Singapore. Garibaldi’s appeal is strongest for diners who prioritize choice and reliability over a strictly choreographed avant-garde experience.



Singapore diners are well-acquainted with both international fine dining and local flavor traditions. A restaurant offering only generic "authentic Italian" food might seem predictable, while one that over-modernizes Italian cuisine could lose the comfort and clarity patrons expect.


Garibaldi finds a valuable balance:

  • It provides recognizable Italian foundations.

  • It includes premium ingredients suitable for celebratory dining.

  • It occasionally incorporates local or regional elements.

  • It maintains a strong culinary identity rather than following every trend.

This combination makes the experience feel both established and relevant.



Course Menu

We indulged in a 5-course menu with 2 signature dishes from the Garibaldi suite; it showcases as a refined Italian–Singaporean progression: delicate chilled seafood, richer shellfish pasta, a fragrant local-inspired main, and a softly tropical dessert. The menu programming transitions smoothly from cool and saline to rich and smoky, then to deep shellfish umami, followed by spiced, aromatic seafood, and concludes with fragrant tropical sweetness. The most striking contrast is between the understated elegance of the caviar-topped capellini and the more vibrant laksa-broth grouper; the pandan dessert then reflects the menu’s Southeast Asian character in a gentler, sweeter manner.



CAPELLINI

Cold angel hair with snow crab meat and fresh caviar

The dish begins with a delicate and refreshing touch, where the fine capellini offers a cool, silky texture that highlights the natural sweetness of the snow crab. The caviar contributes a clean saline note and a subtle oceanic depth, creating a luxurious contrast between sweetness, brininess, and the gentle wheat character of the pasta. Light yet indulgent, this elegant first course leaves a lingering marine finish. Garibaldi has highlighted this as one of its signature dishes, and it is truly refined.



CAPESANTE

Seared Hokkaido scallops, carbonara cream and bacon

The scallops feature a tender, buttery center beneath a lightly caramelized exterior. Their inherent sweetness is complemented by the savory richness of the carbonara cream, while bacon adds smoky, salty flavors and a more pronounced umami finish. The dish is indulgent yet not overly heavy, as the cream was used sparingly. The searing adds depth and texture, resulting in a buttery, umami-rich finish that we thoroughly enjoyed, and yet another Garibaldi Signature classic!



ORECCHIETTE

Handmade orecchiette with prawns in a lobster bisque

A richer and more intensely flavoured pasta dish, centered on the shellfish essence of lobster bisque. The handmade orecchiette offers a delightful chewiness and small pockets that capture the sauce, while the prawns add sweetness and a gentle springiness. This velvety, well-rounded, bisque-like richness with an extended crustacean finish, enhanced by the prawns' freshness was a team favourite.



SUSTAINABLE GROUPER FILLET

Korean clams and laksa broth

This is the menu’s most distinctly Southeast Asian-inspired course. The grouper was chosen to be mild, lean, and gently flaky, providing a clean canvas for the aromatic laksa broth which is very forward-looking for an Italian restaurant. Korean clams add a touch of sweetness and briny depth, while the broth brings fragrant spice, coconut warmth, and layered notes of herbs and seafood. The overall impression is comforting and aromatic rather than aggressively spicy—a polished meeting point between Italian seafood cookery and Singaporean flavour memory. Delicate and aromatic, if you ask me! This dish retains Italian techniques while incorporating local ingredients and flavor memories in a refined, fine-dining presentation.



PANDAN CAKE

Coconut mousse and coconut palm sugar

A gentle, aromatic finish featuring the unique green, subtly vanilla-like scent of pandan at its core. The coconut mousse adds a refreshing, creamy texture and a smooth tropical richness, while coconut palm sugar introduces deeper caramel, toasted, and subtly smoky flavors. The dessert aims to be luxurious yet not overly sweet, concluding the menu with a distinctly local yet refined touch. This dish is truly inspired inspired by Singapore context and then interpreted through an Italian perspective; innovative!



For our beverage section, we went through a series of alternatives covering a pleasing range: A polished Champagne, Italian sparkling wines, a bright Piedmontese red, and a Richer appassimento-style red.


NV Pol Roger Brut Réserve — Champagne

The NV displays a pale gold hue with a fine, persistent mousse. Its aroma reveals ripe pear, green and yellow apple, citrus zest and white flowers. On the palate, it is smooth and refined, featuring a creamy texture, vibrant acidity, and flavors of white peach, lemon, almond, and lightly toasted pastry. A delicate chalky and saline quality emerges in the finish, adding freshness and structure to the wine. Pol Roger's classic blend of Chardonnay, Pinot Noir, and Pinot Meunier provides both finesse and body. This Medium-bodied champagne pairs well with the cold capellini, where its acidity and mousse significantly refreshes the palate while echoing the crab’s delicate sweetness



Berlucchi Franciacorta

An unmistakably Italian sparkling wine, this beverage features a pale straw hue, fine bubbles, and aromas of green apple, white peach, citrus blossom, and fresh bread. The taste is lively and vibrant, with zesty acidity, a softly creamy mousse, and a hint of almond or brioche from traditional-method ageing. It leans towards a more linear and citrus-focused profile, offering a clean, mineral finish characterized by freshness and citrus notes. It pairs wonderfully with capellini and caviar, as the acidity balances the richness and complements the seafood.


Montonale Montunal

A fresh, aromatic wine featuring notes of green apple, pear, white flowers, and lemon peel, complemented by a subtle herbal hint. Its dry, restrained character keeps the focus on the wine’s fruit and acidity. On the palate, it offers a brisk experience with vibrant citrus tension and a clean, lightly mineral finish. This leaner, more refreshing wine, with its floral and citrus qualities, pairs naturally with our seared Hokkaido scallops in rich carbonara cream; its acidity cleanses the palate after each bite, while the wine's nuances contrast with the scallop’s soft texture.



Pelissero Piani 2023 — Barbera d’Alba

A vibrant Piedmontese red wine featuring aromas of sour cherry, red plum, raspberry, violet, and baking spice. On the palate, it typically displays lively acidity, juicy red-fruit flavors, and smooth, moderate tannins rather than a heavy structure. There is a subtle balsamic note beneath the fruit, leading to a fresh, savory finish. The wine is energetic and pairs well with food, complementing orecchiette and prawns in lobster bisque. Its acidity balances the richness of the bisque, while the red-fruit character contrasts pleasantly with the sweet shellfish. It also harmonizes with the laksa-broth grouper, enhancing its deeper, more savory profile.


Castorani Jarno Appassimento

This wine is a richer, more generous red, featuring concentrated aromas of ripe blackberry, plum, black cherry, raisins, chocolate, vanilla, and sweet baking spice. The appassimento method typically results in a wine with a fuller body and a softer, rounder texture, with flavors reminiscent of dried fruit and gentle warmth. We detected plush fruit on the palate, moderate acidity, smooth tannins, and a persistent finish with hints of cocoa, spice, and dark caramel. It paired most convincingly with the grouper with the laksa broth that is deeply spiced and coconut-rich.


Tasting Review

We appreciate Garibaldi for its reliability and trustworthiness, its blend of familiarity and sophistication, its ability to create a sense of occasion without being overly formal, its robust wine culture, its use of luxury ingredients in an accessible manner, and its hospitality and consistency.
