Seasonal Tastes at The Westin Singapore brings back its popular Thai dinner buffet featuring flavors from different regions of Thailand – Northern, Southern, Northeast and the omnipresent street food of Bangkok, from 3 to 30 April 2023 at S$88++ per person.
Resident Thai chefs – Sedtapat Sukpaisanpongsa (Chef Pop), Kamonwan Juntarasate (Chef Por) and Sittha Sa-Nguansat (Chef JoJo) – proudly present their signature dishes and the story behind their culinary inspiration.

Chef Pop – Bringing Back a Brilliant Legacy
Hailing from Bangkok, Chef Pop’s family ran a food business during his younger days. But the business ceased operation due to unforeseen circumstances. Fast forward two decades after graduating from university, Chef Pop is working hard in the culinary scene to reopen his family business and bring back its glorious legacy. His signature Isan Sausage, Homemade Thai Pork Sausage, is a recreation of a trip down memory lane, when he visited his relatives in the Northeast part of Thailand as a young boy and tried a local sausage dish. The amazing flavor left him with a deep impression and he decided to bring the flavor to Bangkok, with his own personal twist. Don’t miss out on the Pad Thai Lobster at the Action Station, another dish that was on the menu of Chef Pop’s family business, brought back with his special touch!
Chef Por – The Young Food Connoisseur
Born in Chiang Mai with the mind of a chef, Chef Por used to visit various restaurants regularly with her family. Though she was young, she always had comments about the food served, like a seasoned chef, as she believed that she can take the recipe to a higher level with her own personal touch. Khao Soi (crispy egg noodles with Northern yellow lobster and chicken curry) is a widely known dish in Chiang Mai, but made special by Chef Por with the addition of the lobster and her mother’s secret Khao Soi paste, to transform it into Chef Por’s Khao Soi.
Chef JoJo – Superhero Chef in the Making
As a boy growing up in Phuket, he often travel with his grandfather, a travelling Chinese banquet head chef, and his convoy of chefs for three to four weeks before going back to their hometown. The group would travel to different parts of Thailand to whip up dishes for Chinese banquets. With more than 23 years of culinary experience under his belt, Chef Jojo aspires to be the leader of a convoy of chefs like his grandfather, who is his superhero. Chef JoJo showcases his favourite food as a child,Phuket Moo Hong, a Southern style pork belly stew cooked using the sous vide method, on low heat over 12 hours so the meat is soft, tender and full of exploding flavors.
So for the Great Thai Feast, diners can look forward to a Thai Action Station featuring Som Tum Blue Crab, Thai Boat Noodles (Chefs’ Recommendation) and Tom Yum Goong. Other Thai dishes also available on the buffet line include:
Northern Region
• Yum Som O Goong Sod, Thai style pomelo salad with poached prawns
• Khao Pad Poo, crab meat fried rice
• Sai Aua, homemade Chiang Mai pork sausage
Southern Region
• Gaeng Khua Poo Bai Chaplu, crab meat curry with betel leaf and vermicelli
• Pad Sa-tor Goong, stir-fried petai with prawns and shrimp paste
Northeast Region
• Yum Neua Yang, grilled angus beef with cucumber, mint, tomato, and spicy Thai dressing
• Larb Ped Udon, spicy duck meat salad with toasted jasmine rice, shallots and chili flakes
• Som Tum Fruits, spicy mixed fruits salad (vegetarian)
Bangkok Street Food
• Kor Moo Yang, grilled Thai marinated pork neck with Thai spicy jim-jiew sauce
• Khao Kluk Kapi, shrimp paste fried rice with condiments
• Poo Pad Pong Kari, yellow crab curry
• Kaeng Phed Ped Yang, roasted duck red curry with pineapple and grapes
Thai Desserts
• Khao Niaow Ma Muang, Mango Sticky Rice
• Faktong Sangkaya, Custard in Pumpkin
• Cha Yen, Thai Milk Tea
Mainstays like Oysters, Seafood in Ice, Charcuterie, Cheese, Carving Station, Local and International Desserts remain available on the buffet line, and the entire array of Thai Desserts were simply amazing; everyone was going for them although we are already filled to the brim...we just had to sample and taste those lovely Thai treats!
