Recognized as a trailblazer in Thai dining since 1988, Thanying at Amara Singapore embarks on a new culinary journey in royal Thai cuisine with updated à la carte dishes and set menus, alongside a new Executive Set Lunch menu, curated by Head Chef Tamawat Itthipornwithool (Chef Gust). 


Having progressed from Assistant Head Chef to his current position, Chef Gust now brings his unique blend of authentic flavors and modern presentation to Thanying’s kitchen. His debut menu update honors the restaurant’s legacy while introducing a youthful, creative spirit that respects centuries of Thai culinary tradition with a distinctly modern voice. 


Carefully prepared to respect the culinary traditions of Thailand’s royal courts, Thanying’s menu update features 19 new dishes alongside beloved classics, showcasing the balance of authenticity and modern culinary artistry that defines the restaurant.  Thanying’s new chapter goes beyond the kitchen, offering a range of new experiences that enhance the dining journey while staying true to its roots. 



To further enhance the culinary experience, Thanying introduces a curated wine list developed with Grand Vin, featuring champagnes and premium wines thoughtfully chosen to complement the complex spices and aromas of Thai cuisine. Beyond the dining table, guests can look forward to a new website and e-shop, integrating online reservations, takeaway, and delivery, seamlessly bridging the dine-in and home experience. 


As 2026 approaches, Thanying will continue its tradition of innovation with wine-pairing dinners with Grand Vin, weekend brunches, themed weekday dinners, and bespoke celebration packages for weddings, solemnisations, and private events, reaffirming its position as Singapore’s most enduring destination for authentic royal Thai cuisine. 


Guests can enjoy specially curated multi-course wine pairing dinners, where a selection of wines from Grand Vin will be thoughtfully paired with Thanying’s signature dishes. The menu highlights the elegance and complexity of Royal Thai flavors, offering a refined dining experience that demonstrates how carefully selected wines can enhance the balance of herbs, spices, and textures that define traditional Thai cuisine.



We sampled the following dishes and wines, to give our thoughtful reviews of their pairing connections:-


  • Yam Salmon & Tom Yum Goong (Paired with Domaine Billaud-Simon – Chablis 2023) – Seared salmon with sesame, mixed greens, and spicy sour dressing, alongside a comforting bowl of Thai prawn soup infused with mushrooms, kaffir lime leaf, lemongrass, and chili, lifted by the crisp minerality of Chablis. We loved the Chablis and it juxtaposed well with the slight tangy flavour from both the dressing and the yummy soup.


  • Grilled Pork Jowl & Herb-Stuffed Chicken Wings (Paired with Domaine Faiveley – Mercurey Vieilles Vignes 2023) – Boneless chicken wings stuffed with minced chicken and Thai herbs, served with succulent grilled pork jowl in Thai sauce, complemented by the elegance and structure of Mercurey Vieilles Vignes, which was pinot noir driven, and it reminded me of their signature dish, the Peek Gai Sod, which continues to embody the restaurant’s dedication to royal Thai cuisine.


    Each boneless chicken wing is meticulously deboned, stuffed with minced chicken and Thai herbs, baked, and deep-fried to order, resulting in a crisp exterior and tender, flavorful filling. The preparation takes a full day, exemplifying the discipline and artistry of traditional fine Thai cooking. 


  • Massaman Curry (Paired with Château Bourgneuf – Pomerol 2019) – A rich and aromatic Massaman curry with beef or chicken, onions, and potatoes served with rice, beautifully matched with the velvety depth and refined texture of a classic Pomerol. We have already enjoyed Thai curry and this is no exception. The fact that Grand Vin bothers to bring in a powerful Bordeaux right bank shows their dedication to their craft, and it went amazingly well with the curry concoction for this dish.


  • Mango Champagne Jelly with Coconut Ice Cream – A refreshing dessert of mango champagne jelly paired with creamy coconut ice cream, offering a light and indulgent finale to the evening. Simple exquisite, and a nice delightway way to complete our culinary Thai-based experience.


These dishes join an array of Thanying’s most beloved recipes that exemplify Thanying’s devotion to craftsmanship and precision, where even the smallest seeds and piths are removed by hand to achieve smooth textures and balanced flavors, hallmarks of authentic royal Thai dining.
