Christmas Bar Menu ($68++ for 2 pax)
From top to bottom: Smoked Salmon and Tomato Salsa, Roasted Young Tom Turkey Breast & Roasted Striploin of Beef and Vanilla Gelato Casatta
Begin the dining merriment with an antipasto of Smoked Salmon and Tomato Salsa served in a homemade Yellow Corn Meal Shell that’s packed with a delicious, tangy filling of Marinated Salmon and light spicy Tomato Salsa, accompanied with a drizzle of Dill Mayonnaise and an appeasing blend of herbs. Complete this lip-smacking dish with a glass of Torent Brut DOC and add on to the rollicking intoxication it brings.
Satisfy your festive cravings with the hearty Roasted Young Tom Turkey Breast & Roasted Striploin of Beef, gingerly slow-roasted to perk up the toasty flavours. Served with a side of Brussel Sprouts, Caramelised Pineapple Rings, Parmesan Grilled Tomato, Chateau Potatoes, Buttered Chestnuts and Baby Young Corn, gusto the dish as you quaff into a glass of Il Pollenza Magnum 2005.
Sweeten the deal with a sinfully nectarous Vanilla Gelato Casatta. This hazelnut sponge cake is generously layered with Vanilla Gelato and infused Brandy. Synonymous with the festive spirit, it is topped with a candied Italian Meringue and garnished with Wild Berries and Raspberry Coulis to add to your daily dose of antioxidants. Pair this with a glass of Ben Rye Passito di Pantelleria DOP 2013 and mollycoddle yourself into the caressing sweetness.
Christmas Restaurant Menu ($148++)
Duck Liver Terrine Crocrante
Kick off the hearty six-course dining experience with the quintessential antipasto, Duck Liver Terrine Crocrante. Inspired by the French classics, the dish is prudently prepared to ensure it brings out its organic flavours. Adding a little crunch to it is a munificent assortment of Charbroiled Yellow Watermeon, Choya Jelly and Pea Tendril, completed with a layer of Green Apple Chutney. Pair this dish with a wine pairing of Torent Brut DOC that resembles the classic flavours of a rose Champagne. Warm your palette with Chef’s Fresh Pot of the Day as you prepare for the next course of the menu.
Sakura Denbu Risotto
An edgy dish like no other is the Sakura Denbu Risotto, a delightful Risotto made exhilarating with a hint of Proseco for a peerless complement of flavours. Giving this classic dish an unexampled look, it is wrapped in a crisp layer of Seaweed and decorated with thoroughly sautéed Onion and a pinch of Sakura Mirin and Bonito Flakes. Pair this with the delicacy and nuance of a Magrez-Aruga’ Koshu 2009.
Poached Lemon Sole & True Cream
Next, savour the fresh Poached Lemon Sole & True Cream as you celebrate the boisterous festivity. Jazzed up with layers of deep fried Juliennes of Green Zucchini and Carrots on top of a creamy White True Cream Foam. Further gratify your cravings with the beauteous mess of Yellow Chanterelle, Edamame, Mini Pear and Mazano Pearl Tomato on the side. Pair this with a glass of Ciampagnis Vieris Chardonnay Friuli Isonzo 2013 and tickle your tastebuds.
Duo of Lamb Loin
Thereafter, allow yourself to be swept away by the Duo of Lamb Loin, consisting of a sumptious pair of Lamb Loins prepared in two very different styles. Roasted on a skewer, one is prepared in Marinated Herbs and Mustard, while the other pan seared and lightly seasoned with Fried Sesame to balance the fiery mix of sapidity. Completing the parcels of Loins is a layered Tomato with an impeccable blend of cheese and herbs – Ricotta, Parmesan, Basil and a Sprig of Thyme. Sip into a glass of Il Pollenza Magnum 2005, ideal to go with elaborate dishes of gourmet meats.
Reflecting the colours of a perfect Christmas tree, the White Forest Verrine Style is layered with Sour Cherry Compote and Mascarpone con Matcha Chantilly. Garnished with a touch of Matcha Soil and a complimenting aroma of Raspberry, this saporous and divine Dolci will have you wishing Christmas lasted all year round. Pair this with a glass of Ben Rye Passito di Pantelleria DOP 2013, reminiscing of fresh apricots and candied orange peel for an exquisite finish to your meal.
