Returns to Andaz Singapore with Culinary Maverick and Austria's Chef of the Year 2021 - Chef Max Stiegl, from 13 to 17 October 2023


Food aficionados in Singapore are invited for a thrilling gourmet adventure like no other from 13 to 17 October 2023 with Gault & Millau Austria’s Chef of the Year 2021 Max Stiegl. With a penchant for disruption and a palate for innovation, Chef Stiegl has earned his moniker as the "Kitchen Anarchist" for his unapologetic approach to cooking that turns tradition on its head. Nestled in the heart of Burgenland, Chef Stiegl's restaurant, Gut Purbach, is a gastronomic pilgrimage destination, attracting epicureans worldwide, including the renowned Anthony Bourdain, all in pursuit of savouring Stiegl's celebrated "variety meats" (offal) delicacies.

Chef Stiegl will delight with a menu featuring his signature dish “Chicken In The Bubble” – chicken cooked in a pig’s bladder, stuffed with decadent ingredients like duck liver and truffles under the skin. A rare treat to taste fresh produce, this five-course menu will delight food adventurers. Expect a twist of Austrian classics including chef’s Ratatouille, an artful medley of Viennese vegetables; Oafish; a typical Austrian dish with cauliflower and poached egg; and Ritschert, a comforting and hearty stew served with smoked eel. For dessert, taste unique flavours with a Viennese Bread Soufflé, served with orange liqueur and corn ice cream.

Max Stiegl - The Kitchen AnarchistA cooking extremist at heart, Chef Stiegl is famous for his multi-course offal menus. Nothing is wasted in the kitchen of his acclaimed restaurant Gut Purbach, not only out of respect for the animal but also due to his belief that this is what makes a good cook - the ability to process an entire animal from mouth to tail. Gourmets travel from all over the world to visit his restaurant which typically has a long wait list. In winter, Chef Stiegl orchestrates the Sautanz, an extraordinary food festival known as a 'feast for the senses'. Every element of the pig is masterfully crafted into exquisite dishes and one can taste where tradition's essence and the spirit of togetherness converge in a symphony of flavours and camaraderie.

Tickets to Sautanz this year are selling out fast, with limited availability for 9th and 16th December 2023.His personal journey to culinary stardom is nothing short of remarkable when at the age of 19, he was the youngest chef of all time to be awarded a Michelin star. With a background steeped in culinary traditions and commitment to sustainability, Chef Stiegl has developed a reputation as one of the most innovative and creative chefs in the world of gastronomy. When he's not in his kitchen or visiting producers, he's a regular guest on cooking shows with his open, warm personality and typical sense of humour.
