The Lobby Lounge celebrates InterContinental Singapore with a year of traditional Peranakan dishes

To celebrate the rich heritage of Peranakan cuisine, The Lobby Lounge at Intercontinental Singapore invites guests to explore the authentic flavors of their cherished heritage through a series of beloved Peranakan dishes, embarking on a yearlong Peranakan Journey.

Designed to celebrate InterContinental Singapore's rich history and its prime spot in the arts and cultural district, A Peranakan Journey presents a refined exploration of iconic dishes, reimagined with classic elegance.

A PERANAKAN JOURNEY

Peranakan cuisine is a distinctive culinary art form that effortlessly blends Chinese, Malay, and Indonesian culinary traditions. It fuses the aromatic herbs and spices of Southeast Asia with the refined techniques of Chinese cooking, resulting in a remarkable gastronomic experience steeped in history and tradition. We went through the auspices of this amazing journey with Chef Putra, who cooked us a beautiful meal depicting this Peranakan experience, one evening, with Hayden from the Lobby Lounge in attendance and tending to our every need.

Capturing the essence of Peranakan cuisine, we sampled the cherished Babi Pongteh in April, a classic Nyonya-style braised pork dish. This sumptuous creation includes tender, slow-cooked Kurobuta pork belly, shiitake mushrooms, and taucu—fermented yellow soybean paste—imbued with rich, savory flavors. In addition to the Babi Pongteh, we tried the traditional Chap Chye, fragrant coconut rice, and Achar, a medley of pickled vegetables, all elegantly presented in the classic 'tingkat' style.

It's a true symphony of senses and emotions as we dive into this incredible dish; the aroma is irresistible, and there's a tingling umami infused within the primal richness of quality pork. Every bite presents a textural dance; the flavor unfolds with a savory depth, accentuated by a hint of salt, pepper, and perhaps a subtle smokiness from precise heat control. Sharing this labor of love is more than just a meal; it's a memory served hot, a celebration of skill and passion that transforms simple ingredients into something extraordinary!

A Peranakan Journey began in February 2025 with the cherished Beef Rendang Tingkat Set. This luxurious and aromatic Nyonya coconut beef stew features tender Australian bone-in short rib, carefully slow-cooked and braised in a rich blend of coconut milk and an exquisite array of spices.

In June 2025, another celebrated dish in Peranakan cuisine will be launched and this is the iconic Ayam Buah Keluak, a culinary masterpiece with bold and intricate flavors. This dish includes a tender bone-in chicken leg, slow-braised in a rich, velvety gravy infused with tamarind, homemade sambal belacan, and an assortment of aromatic spices.

The signature Buah Keluak, known for its earthy and nutty essence, is stir-fried until fragrant, adding depth to the dish. This timeless classic offers a harmonious and indulgent taste of Peranakan heritage. The highly popular Nyonya Popiah, reimagined by The Lobby Lounge’s culinary team, is launching in July 2025. This exquisite creation is wrapped in a delicate spring roll skin, providing a soft and velvety texture. Inside, a generous and harmonious filling awaits—succulent tiger prawns, savory Lap Cheong (Chinese pork sausage), sweet and tender turnip, and crisp lettuce come together in a perfect symphony of flavors and textures.

This dish is elegantly complemented by a rich, sweet soy sauce and chili, delivering a refined twist on this beloved Peranakan classic. With each thoughtfully crafted dish, guests are invited to savor the harmonious blend of cultures, flavors, and traditions that define Peranakan heritage. From intricate techniques to the use of premium ingredients, A Peranakan Journey is more than just a dining experience—it is a tribute to the vibrant legacy of the Peranakan community, brought to life in the elegant ambiance of The Lobby Lounge.

Along with the Peranakan Journey, we also sampled some lovely new dishes from their seasonal dining menu, including the Signature Oeuf En Meurette, a special dish from France that combines the essence of a crispy Soft Poached Organic Egg done to classique perfection along with Pancetta Ham, Swiss Mushroom, Sourdough Toast, Red Wine Reduction and Micro Cress, truly very special and tasty!

We also had a Classic Black Angus Beef Tartare that was taken from an Australian MACKA'S Striploin and tossed up nicely by Hayden, and filled with superb ingredients and taste boosters, including a combination of Lilliput Capers, Gherkin, Parsley, Egg Yolk, Tabasco, Grain Mustard and this was served with French Fries and Mesclun Salad, just so special! This premium beef tarter was just exquisite!

Interesting enough, we also tried the Har Cheong Gai, and the showcase of 6 lovely Crispy Prawn Paste Chicken Mid-wings, was done to perfection, and one of the best Har Cheong Gai, I have had, so this is highly recommended!
