    A unique destination located on Victoria's Mornington Peninsula, Jackalope is indeed a timeless venue of prime luxe, design, comfort and convenience, and certainly a revered icon of the Australian hospitality industry. We were super elated that we are going to stay in a one-of-a-kind boutique modern curated hotel right in the heart of the Geothermal Springs region of Mornington, during the winter season and the fact that many folks do not know that this region boasts an array of hot springs - makes it fascinating for story-telling and definitely an escapade from everyday urban life in global cities. Our experience and views after our amazing stay... DESIGN - ART - CUISINE - SERVICE - INSPIRATION - NATURE Artist Emily Floyd’s 23-foot-tall sculpture of a cute-looking jackalope is depicted right at the entrance to this beautiful destination, which a part-rabbit, part-antelope. We like this humble winery township, that focusses on food and wine, time-forgotten spaces, wine tastings together with a huge display of over 10,000 light bulbs - the epitome of bubbles from champagne or bubbly from their Doot Doot Doot and the fact that they change their menu fornightly, and also a nice welcome drink at Flaggerdoot, inside an old-fashioned modern stylo cocktail bar...right opposite a door facing the reception. With the rooms facing a private terrace, views that encapsulate bucolic lengths of vineyards and bushland right next to a 100-foot long pool; we love the fast wifi, toilet vanities, the rain shower and the room lighting design and switches-flow was amazing - well planned. There is free wine-tasting over at cellar door, along with free minibar with an assortment alcoholic and non-alcoholic beverages, milk, juices and nutritious snacks, along with free popcorn and chocolate ice-cream (aka choc tops), so that you can have your own movie nights along with bottomless hand-deliveries of Jackalope popcorn and locally-sourced choc tops, which you can order from the reception. One can enjoy unlimited access to their vine-facing wet spaces: the infinity pool, heated spa and infrared sauna; also, the room services team will set the tone for rest with a sensory routine, including light and linen preparation and a take-home gift each evening. Every guest is entitled to a complimentary tasting at their Cellar Door for a select range of current wine releases with their expert team. Breakfast was just stupendously amazing with the right concoction of perfect blending textures, temperatures, and flavours on the morning breakfast menu dishes; classique and I had the Spanner Crab Omelette 2 mornings in a row - that's how brilliant and consistent is their breakfast expression. We just love the landscape gardens, the lush vineyards, the amazing flora, the timely expressions of the architecture and the brilliant use of various dimensions surrounding the Jackalope nomenclature - cleverly curated and displayed for modern tourists and locals alike.. The juxtaposition of a lovable fuzzy jackrabbit with a ferocious antelope is the source of allure for Jackalope's founder, Louis Li. Coincidentally encountering the mythology during a trip to Germany, where a figurine in an unassuming antique store stirred research into the rare hare, Louis became absorbed by its fabled past and mysterious existence and along with it, the creation of the LL Vineyard equation. LL Vineyard is home to Jackalope, Rare Hare, Flaggerdoot, their cellar door, and the boutique winery where all the Rare Hare wines are created. Planted in 1989, the 11-hectare LL Vineyard has taken root in the deep volcanic soils typical of the slopes of the Mornington Peninsula, and is known for producing fine, cool climate Chardonnay and Pinot Noir. With over 30 years’ experience, they have refined and honed their practices to grow the very best wine from this unique site. Winemaker, Geraldine McFaul works closely with viticulturist, Ant Davenport, who hand-tends each vine, to maximise quality each season. We simply adore the layout of the Rare Hare, where diners get to mingle in an open-space for 90 pax; a hand-crafted wood-fired oven takes centre-stage in the dining space, adding character to the mood, lights, ambience and food. Food is delivered through a fine balance of heat, acidity, depth of flavour and texture to each plate. We sampled the Oysters, comprising rare hare sparkling and cucumber mignonette, as well as the Fried Barramundi Wings consisting almond skordalia and Nduja butter. The Curried KingFish was indeed special with cauliflower, Bulgur wheat, pine nuts and capers whilst the slow cooked blade of beef, inclusive Cime di Rapa, pumpkin, shallot and salsify delighted our taste buds with the yummy Shrimps. " spacious cottages in beautiful surroundings" - the tagline hits spot-on in defining the wonders of this place, this gorgeous accommodation set in the centre and heart of Yarra Valley and Eastern golf course, where the mammals roam freely, from Eastern grey kangaroos, swamp wallabies to wombats and echidnas. Nothing beats see teams of kangaroos, up close and personal, hopping around during dusk and dawn and almost throughout the entire day, right outside our cottages across the 120 acre countryside...roaming freely in their natural habitat! Amazing! Rejuvenation A night at Yarra Valley is best-spent at these lovely homely comfortable modern yet spacious cottages. Truly a stunning natural setting, perfect for those who love nature and wanting to escape the briskness of city life and for those who seek calm, solace and serenity, just an hour's drive from Melbourne city. The check-in process was expeditious, with no fuss, instructions were clear, and they were standing by, ready for me when I arrived, and breakfast is all ready at our cottages as explained and ready for the next day, when we arrived at our Cottage. Sustainability Waking up in the morning, the magpies, ravens and cockatoos were already flying around to welcome the morning light; the sulphur-crested cockatoos proved formidable and majestic, making a grand entrance on the ledge right in front of our cottage porch; it was a sight to behold, to be amazed, to awe...such wondrous bird life and fauna, which is a testament to Yering Gorge Cottages undertaking an Australian first in setting a new environmental benchmark that has support from the Department of Sustainability and Environment, Melbourne Water and the Commonwealth of Australia through their referral under the EPBC Act; environment preservation and sustainability are key values omnipresent throughout our stay. Environment Yering Gorge Cottages prides itself as an eco-friendly nature retreat, providing an immersive, nature-based accommodation experience. It is set against the backdrop of the Christmas Hills and Dividing Ranges, where bushland intersects with the Yarra River. Yering Gorge is well-emplaced geologically as one of the rare places on Mother Earth, where a river flows from a plain into a gorge, and this unique phenomena forms part of the catchment area for the nearby Sugarloaf Reservoir State Reserve which can be found tucked away in the nearby Christmas Hills. Accommodation We stayed at one of the two Yering Gorge Cottages free-standing, two-bedroom cottages termed Maroondah Cottage, and it was absolutely brilliant! It is truly ideal for twin couples, extended families; or groups of friends travelling together. Our two-bedroom cottages include a shared bathroom with a separate bath and walk in shower; floor to ceiling panoramic windows overlooking the Yarra Valley; as we relaxed on the large private deck with barbeque, we enjoyed and sipped some lovely Yarra Valley wine.     For centuries, people have sought the wonderful relaxation and restorative benefits of soaking in naturally heated water and we chanced upon a sanctuary and a gorgeous day spa and thermal springs destination, termed Alba, whilst traveling in Victoria, Australia. Alba Thermal Springs and Spa comprises 32 pools of varying sizes and purposes, with geothermal pools, cold plunge pools and herbal-infused botanical pools – set in 15 hectares of garden right in the heart of Mornington Peninsula. The peaceful surrounds envelope across this contemporary indoor, open-air and outdoor hot spring pools. The area is well known amongst the locals but now it is primed for international status and to put Australia on the map as a hot spring destination, complete with boutique hotels, golf courses, unique wineries and cellar doors, world-class modern restaurants, natural attractions, pristine beaches and seaside villages. Design Parameters The overall landscape and architecture is designed by the team of Hayball and MALA Studio, with stones, concrete pools, flowering meadows, waving grasses all well cradles to suit a social purpose, a setting, a sky aperture, where privacy and intimacy matters, submerged and gentle, using indigenous plants and respect for the natural environment. With a desire to become Victoria’s most sought-after bathing and wellness experience, the centre’s unique approach to a peninsula-centric landscape design, creation of a coastal-like expression of Moonah woodland and expansive ecology using a biophilia approach. “From its inception, the ethos behind Alba was based on finding synergies between the environment, community, culture and history,” says Alba General Manager Craig Dodd. “In appointing building architects and landscape architects, we had to find practices that could work together holistically to create a seamless indoor and outdoor experience". Each garden and pool space exhibits its own texture, palette, theme, purpose and ambience, super uncontrived and definitely very natural, so it's personal and space-centric, thus ensuring a superb bathing experience. Touring Alba Alba is well-planned for wellness-goers as we traverse across the various hot springs and plunge pools, at its locality, from The Forest, to the Luna, the Eve, the Waves (we like that), the Cove, the Shell, the Seasons (my favourite), the Hemisphere, the Cascades (both upper and lower), the Sands, the Falls, the Botanicals, the Bight, the Dunes and the Tides; the private Springs area is termed the Terrace, the Clouds and the Salts (cleverly named), aside from Thyme (the restaurant and cafe) ; each pool has a different position and view and a differing temperature gradient, based on cold or hot. From luxurious full day self care packages to half-day rituals and treatments, Alba spa offers a sanctuary for a varying suite of facial and body treatments, from package rituals, Vichy showers, facials by Vanessa Megan and Aika, Massages, Hamman bath (wow fabulous, this is truly lovely), Bath time and Hands & Feet treatments, as well as spa packages and indulgent experiences. A Well-Thyme Experience Alba has a renowned restaurant Thyme that showcases locally-sourced, seasonal produce with their menu curated by a well-known Melbourne chef, restaurateur, cookbook author and television presenter, Karen Martini. The menu features fresh, healthy dishes served alongside excellent coffee, herbal tea blends, local cold-pressed juices and signature cocktails, and the wine list highlights the Peninsula’s many local vineyards, distilleries, and breweries. We sampled a variety of dishes, including House ocean trout gravlax comprising egg, cucumber, crème fraîche, caviar pearls, chives, watercress, capers and crostini, as well as an Alba red rice bowl, cured tuna, cucumber, kimchi, shitake wakame pickle, soft egg, furikake avocado; the O’Connor’s beef, carrot and daikon karē, pickled radish, curry leaves, house rye udon (super excellent and so yummy and one of the best Beef renditions I had in Australia), along with a Crab Crumpet, consisting of a spanner crab (typical in Australia) burnt butter and whipped cod roe on a house crumpet.; we whipped up a Montalto Pennon Hill Syrah as well as a Kerri Greens Pigface Chardonnay - both wines indigenous of course to the Mornington Peninsula region. Immaculate! Geothermal Experience The mini roughness near my elbow was removed instantly after an hour's dip, which testifies to the healing properties of geothermal hot springs at Alba; a thought that kept on going through my mind was the ability to navigate the grounds of Alba during winter, but the thick bathrobes, coupled with good directional advice and pathways allowed me to truly enjoy a wonderful spa and hot spring dip in the middle of winter. The sun came out towards noon time and that wonderful sunshine, coupled with nice cool breeze perfected the entire geothermal wellness experience with water as the mood-setter. I learn to embrace this new verb termed "bathing" in this region, and it also sets the onset and parameters governing "wellness tourism" in this part of Victoria, just 90 minutes drive from Melbourne City in Australia. Origins of Alba's Water Alba uses 100% geothermal water, and this water contains naturally occurring minerals including sulphur, calcium, magnesium and potassium and is classified as a ‘sodium chloride bicarbonate spring’. The water is naturally heated to between 37°C and 43°C in underground aquifers 550 metres below the surface and used to fill their pools daily. The therapeutic benefits of these waters are immense and are said to include the alleviation of neuralgia, bruising, articular rheumatism, stiffness of the shoulders, recovery from fatigue and muscular complaints. As we were curious to how the water is being extracted, we learned that the water at Alba reaches the surface at 43.6°C and is pumped to it’s control room. The water then passes through a sanitation system before being diverted to individual pools all across the venue, and the wastewater from the pools is then collected in their underground storage tanks, pumped to their treatment facility, where it is cleaned and tested again before being re-injected underground, ensuring the long-term sustainability of the geo-thermal aquifer. Alba cools water for their cold plunge pools; the heat extracted from the cooled water is collected and transferred into their wastewater so that the temperature they inject is the same as the temperature they extract. Alba offers guests an array of bathing experiences including their rain pool (The Falls) and their seasonal pool (The Seasons) where the temperature changes over the year. Alba’s freshwater needs are met through rainwater collection in 10,000 litre tanks, which are used for irrigating their gardens and for their onsite nursery; a truly remarkable sustainable pathway! The exhibition opens on 16 June 2023. Check them out at https://www.lindagallery.art/ Halcyon & Crane We also visited @halcyoncrane displaying their new menu offering all-day café-style dining that delivers a vibrant Western-meets-Sichuan philosophy in their culinary creations; so immaculate and tasty in all ways! Halcyon & Crane serves all-day café-style dining and drinking in one of Orchard Road's finest shopping malls, The Paragon, with a vibrant Western-meets-Sichuan philosophy. Its cuisine is modern European with a Sichuan influence, with wholesome elements embedded into well-curated, beautifully crafted dishes and drinks. The Seared Gyoza shone through our taste buds with a bevy of truffle pumpkin sauce, black fungus and Japanese cucumber, exquisite! We then tried the Crispy Squid with green chilli, Sichuan BBQ spices (a true reflection of the Halcyon & Crane concept and origins), with sticky pepper fish sauce and then we sampled the Salmon Garden, comprising of a bed of herbs and green salad, multi grains together with a melangé of roasted miso red dates sauce. The Open Grilled Chicken Breast Sandwich was so yummy, and expresses itself through with guacamole, multi grains salad on a honey mustard glazed, toast sourdough. The Bathing Experience Having gotten used to the cool-cold weather during the winter of Victoria, it was drizzling on the day we got to Peninsula Hot Springs, so without further ado, we went straight on to check out the bathing experience, and it was simply heart-warming to have a super warm-hot dip right in the heart of winter, and in the middle of Mornington Peninsula, in this bushland-inspired setting with all the components of a Victorian "onsen" experience, and whilst there were families, couples and tourists along with locals all wanting to experience this awesome mineral springs, we carved our own own private space to enjoy 90 minutes of full bliss within the super hot spring dip - it truly is the highlight of our Victorian-Australian trip; highly recommended, especially in winter or autumn! Butcher Dario Cecchini commands presence over this beautiful flagship dining experience, Bottega di Carna, a truly modern and eclectic Italian eatery that exudes vibes and touches of Tuscany when we were dining in-place; we were met by Executive Chef Alastair Clayton who did wonders to the food we tasted along with Chef de Cuisine Kenny Huang and the combination of their culinary finesse along with their teams, including F&B Director, Justin, added service, finesse and style to the entire experience; prime cuts of the meats were clearly showcased and driven to immense perfection! Allegrini "stylo milo"! We sampled the SEABASS CRUDO consisting of grilled zucchini, lemon & marioram oil - so wonderful as I have not tasted anything like this before; the DARIO'S SIGNATURE STEAK TARTARE was amazing with a neat selection of smoked paprika, olive oil and lemon and the CARPACCIO DI CULO with seiso verde was just amazing! The lovely Veuve Clicquot Yellow Label Champagne was a trustworthy companion that brought out finesse when paired with this bevy of starters combination. For the main course, we chose the BRANZINO FILET comprising grilled artichoke & salsa verde, exquisitely done and also the STOCKYARD RIBEYE 280Gm .. Australian Black Angus.. immaculate! We were given a choice of special steak knives, superbly designed for the classique Bottega di Carna steak experience, and we knew it would exact our expectations! We couldn’t leave without dessert so we were given a taste of the VALRHONA CHOCOLATE FONDANT - a selezzione of cocoa nib tuile and homemade vanilla ice cream and also the TIRAMISU which is served at the table for two pax, love it! Located on the 10th floor, the Absinthe Bar opens daily from 11am – 11pm; it is a rooftop bar and lounge featuring the finest combination of wine, cocktails, and tapas in a grand and glitzy yet subdued setting at the rooftop overlooking the Sapa valley. Absinthe has a lavish domed ceiling and takes inspiration from the glamour and sophistication from the heyday of Paris in 1920s – Les Annees Folles. With an external fireplace for guests to enjoy the night sky and mountain range, Absinthe is the place where effortless luxury and unspoiled natural surrounding meet to create a sense of place like no other. I taste a decent cocktail, a nice French wine and some awesome bar bites, that again is a testament to their brilliant F&B team, to come up with savvy names that match the luxe of the Bill Bensley property, along with a delightful french colonial period nomenclature. The "Chanel your Inner Coco" aptly describes the combination of Grey Goose l'Orange, Lillet Blanc Rose whilst being melangé with a mix of Sparking wine, red wine and Pearls, providing for a beverage finesse. Refreshing, bubbly with pearly drops fill the taste buds as we consume this tasty beverage. The "Katsu Sando", inspired by the Japanese-French painter and printmaker, Tsuguharu Foujita, traditionally features pork, but Absinthe realises this delightful fish using a composition of a lovely strip of Wagyu beef A5++ striploin, milk toast, katsu sauce and panko bread- the result is astounding and our media rating gives top marks for this brilliant innovation. The "Gambas Al Ajillo"- driven by the memory of Salvador Dali, uncovers a spread of prawns, paprika, white wine, butter and garlic - the outcome is marvelous, delivering an amazing tasty feel, with umami and sour blend, given the prawns an "oomph" taste - our media rating rates this 10/10 - kudos to the chef! Facilities Le Grand Bassin is a gorgeous indoor swimming pool and it is placed on the 7th floor, and it is open daily from 6am – 9pm. Le Grand Bassin features emerald green marble columns, bronze statues and pink chandeliers over the vast swimming pool and it provides the ultimate indulgent swimming experience in chilly Sapa during the winter month, such a nice warm dip. The luxury indoor pool is flanked on each side by floor to ceiling windows with spectacular views, and assumes a dominant feature within the hotel environs, one of our favourite Indoor Pools in Asia. The Athleticum is a fitness center, well equipped to match your fitness regime while away from home such as treadmills, exercise bike, dumbbells. Sited on the 7th floor of the hotel, it is open daily from 6am – 9pm, and assumes a striking deep blue décor and refined period features. The gym also has floor to ceiling windows overlooking the stunning natural scenery of Sapa, great when doing your workout. The Cacao Patisserie is situated on the lobby floor of the hotel and open to walk-in guests, Cacao brings the authentic tastes of a French patisserie to Sapa.
