The artistry of Irish produce is brought to LIVE at Man Fu Yuan as they showcase their finest offerings from the esteemed Irish Duck Company through three exclusive set menus, each with a different symphony of opulent flavours. We sampled the Elegant Set Menu priced at $228++ per person, and were fascinated with the presentation, the taste, the ingredients, the style of cooking, and the way each dish was shared and a detailed explanation given, that depicts the tremendous effort put in my Chef Aaron and his team, in preparing the menu, which depicted each dish in a simple format on the tasting menu in 5 main headers (bolded). We are given a lovely welcome drink to prepare our palates first, and then we had our first course Appetizer, which comprise of the John Stone Irish smoked salmon flower, wasabi aioli, along with the Chilled cherry vine tomatoes with crab meat, and Chilled John Stone Dry-Aged beef aged-citrus honey soya sauce and sesame seed - the mix was incredibly tasty! For Soup, we had the Braised golden bird's nest with golden pumpkin superior stock; it was exquisitely presented and as a Cantonese who drinks superior soup on a daily basis, I can simply testify to the work executed in delivering this yummy soup, full of stock taste. The Bird's nest was separately added and we had the self-service option, so it gave us the opportunity to try the soup, with and without the Nest option. We then had the Vegetable which hit the right tasting notes with a wok-fried John Stone Irish lamb loin melangé with a good dice of Sarawak black pepper sauce and tossed with a humble Hong Kong kai-lan - the presentation and taste was sufficiently flowing with prime goodness. We truly immersed ourselves in the sublime tenderness of their slow-braised Irish Hampshire Pork Belly, which exudes a brilliant testament to the artistry of Irish gastronomy. For the Pork Dish, the Braised Irish Hampshire pork belly was tempted along with a South Africa 5-head abalone, which brought about a value distinction to the dish, as we revelled in the expertly prepared dish to taste the overflowing Irish marbling in the pork belly, just sumptuous beyond belief! When it came to the Noodles dish (as humble as it sounds), it actually consists of Chinese ramen (which was done with a decent al dente bite, as I am a noodle lover) with rock lobster (powerful), Silver Hill Irish Duck (which was blended and fitted well) along with superior XO sauce. We just succumbed to the enchanting aroma and exquisite flavours of their perfectly roasted-smoked Silver Hill Irish Duck, with that super fresh Lobster, marvellous! As we went to the last course of the menu tasting which was Dessert, it didn't taste or look ordinary, as you can assess and see that this "aburi-looking" Oven-baked mango pudding brought about a nice finish to the entire course; the overall menu fitted well and not super filling, but yet portioning was just nice, so we loved it! Immaculate! Sesi France defeated Telekom Baskets Bonn 70-69, making it only the second Final in Intercontinental Cup to finish by a single point margin, following the 2015 title game, which Brazil's Bauru won 91-90 against Spain's Real Madrid. Italian Brands Take Spotlight at this year's showcase at MBS! FIND - Design Fair Asia 2023, the key marketplace for furniture, interiors and design, returns to the Singapore Design Week from 21 - 23 September 2023. Spanning over 18,000 sqm of exhibition space at Marina Bay Sands, Sands Expo & Convention Centre, the 2023 edition will spotlight Italy's prominent position as a top exporter of furniture to Singapore, including the collective participation of 38 Italian companies and a new installation 'Italia Geniale'. Origins & Background The Hair Shop commenced their creative hairdressing salon back in 1986, and they have a wide range of clientele, from celebrities and royalty to white-collar workers and students. The founders Sam Koh and Gina Lau met in their early 20s at a hair salon named Mosche (pronounced moosh), which was a renowned salon back in those days, and after several years, they left and started The Hair Shop. The Hair Shop, its staff and owners, strive for a constant reinvention of existing styles and techniques. They are always on the lookout for the latest products and treatment techniques, and often reflect on a way to weave in the old with the new. Even with the constantly changing fashion trends, expect to be given a hairstyle that will suit not just your style, but also your personality. Combined with their lengthy experience in the industry, customers can always rely on their expertise for a fresh look, and for thorough hair care. Personalities I spoke with both of them, and noted Gina's superb personality and her eagerness to please and exceed the creative expectations from their clientele, and also enjoyed speaking with Sam, who gave me a good sharing of his journey in the hair and design world, including interior design and art pieces which has shaped his creative mind. Gina built her career in the Singaporean fashion industry and is a respected and admired individual. She has travelled the world as singer Sandy Lam's hairstylist for various shows and concerts in Beijing, Hong Kong, Taiwan and the United States, and her work has dominated Singapore's fashion magazine covers, being prominently featured in major magazines such as Her World and Female. She was also heavily involved in the Elite Asia Pacific Models Award in Shanghai in 2006. Sam has been involved and worked with international product companies such as Wella, P&G and L'Oreal in their many product launches, shows and seminars over the years, and his artistic flair helped him to create and design styles for theatrical productions— namely Dick Lee's Nagraland, staged in both Singapore and Japan. He has judged numerous hair competitions, taken part in hair shows, and conducted various seminars in the Asia Pacific. Sam has also had the privilege of working with visiting top fashion designers, as well as styling supermodel Naomi Campbells' hair for the opening of Valentino's flagship store in Singapore. Achievements The list below encapsulates the following accolades that they have garnered over the past decades and it's truly amazing on the celebrities, royalties, shows and competitions that they have been involved over the years, which indeed testify and acknowledges their creative flair and competencies:- 1980s Styled actress/singer Josie Ho (daughter of Stanley Ho) in Hong Kong. Styled the Taiwanese singer Tracy Huang (黄莺莺)when she performed in Singapore, and followed to her shows in Hong Kong as well. Gina was invited by the Queen of Brunei to style her hair, and would later work on the princesses as well. I become sort of a “resident stylist” for the royal family, which was a huge privilege. Styled the hair of the models for the annual cover of Her World magazine. She had worked with the late Tan Yoong, who was a very respected local fashion designer best known for his bridal gowns. For me, this collaboration was big deal for anyone working in this industry. Gina served as a guest judge for a hair competition in Singapore (I recall vaguely the name was “Golden Scissors”) 1989 Served as Dick Lee’s stylist for his Mad Chinaman tour and his wedding (to Jacintha Abishegandan) as well, among many, many other occasions. 2000s The whole shop worked on the Elite Model search in Shanghai, which was a huge show by the model agency Elite that flown in models from all around the world.They serviced all the participating models for their runway walks, and other appearances. Worked on the Audi Fashion Show in a similar capacity to the Elite Model show. Styled Singer Eric Moo as a resident stylist for his performances and concerts. Styled Hong Kong Heavenly Idol Aaron Kwok when he performed in a concert in Singapore. 2004 They did Sandy Lam’s hair on several occasions, notably her 2004 tour, her award presentation in Hong Kong, a magazine feature in Singapore and her MTV album cover in Taiwan. The hotel stay at the lovely Intercontinental Singapore, commenced with a chauffeured pickup from my starting location at Marina Bay Sands; my driver, Yao De, was on-time and came with a lovely Ipad showcasing my name, of course! He was friendly, courteous and helpful and all it took was 7 minutes to my venue. Upon arrival, I was greeted by the Head Butler Shirish (who has been taking my messages and making arrangements for me, 3 days before my arrival) along with my personal butler concierge Chia Yi, and together with her marketing colleague Zhi Yu and room division colleague Sushant, true feel of a Luxe VIP! I like that! The private butler service was a special one that just commenced recently; Shirish was earmarked from his many years of hospitality in Dubai to head the department, and he was already in contact with me 2 days before my arrival; my personal concierge Chia Yi had previous luxury butler experience so I knew that I would in good hands! I was escorted to my room where I was welcomed by Azfar, another butler and served the welcome drink, the Intercontinental Tea with Sour Plum, so refreshing with a nice cool towel, which I consumed with delight, whilst being brought around on a tour of my one-bedroom suite (69 square metres - so spacious and pretty big), awesome curated welcome amenities, wine and branded toiletries, with a wonderful plethora of a welcome greeting card, fruit basket, yummy snacks and a lovely bottle of Kressmann Merlot 2021, whilst doing my simple and personalized room check-in and briefed on my itinerary by Chia Yi for my 3 days - 2 nights hotel stay, and a welcome message as well from the General Manager, Andreas Kraemer. I noted the welcome pillow that was personally embroidered with our acronyms - nicely done - and so later, it was washed and ironed and given to me (so I can bring it home), and it was nicely presented in a tray, along with a gorgeous Peranakan-inspired name card holder, a passport holder and a lovely metallic-driven bookmark; so thoughtful the team from Intercontinental Singapore! The toiletries in the bathroom were amazing, and the scent on the bath gel, pleasant, and at turn-down, there were chocolates, a mist spray for the pillow, room and bedsheet and another eau de parfum roll-on from Maison 21G, packed in a pretty box and placed on the bed, along with a bedside mat, so thoughtful once again; Housekeeper Amy did an amazing job, by making sure that every fuss and every detail was accounted for, before handing over the room at each turn. Oooh, i love the plush bathmat outside the shower room, so fluffy, I almost wanted to buy it and bring it home! Intercontinental Singapore has 14 different room types, so my category was the one-bedroom suite; a haven of penthouse living in my luxuriously-appointed that is situated on Level 16 (highest level) of the hotel. The suite is bursting with natural daylight from floor-to-ceiling windows, and feature a plush living room, a charming bedroom. Throughout my stay, I had the convenience of easy level 1 parking status outside the main entrance of the hotel accorded to me, and when it was raining, Chia Yi came to pick me up with an umbrella, and always was on standby, attending to my every whim and fancy- truly characteristic of a luxurious top-notch butler service in every imaginable way! Enhanced Club Intercontinental Experiences The Private Butler stay comes with Club Floor Status "termed Club Intercontinental" so we had the privilege of dining at the Club level 2, for breakfast (which was a la carte by the Club menu) from 6:30am to 10:30am (so waking up late at 9:30am was perfectly alright), for tea time - from 3-5pm (with wonderful snacks, yummies, cheeses, fruits, nuts, ham and delectable pastries, puffs and scones, together with coffee, tea, juices, the full works, for evening cocktails time from 6-8pm, so lots to drinks from beer, wines, bubby, spirits, cocktails, along with cheese, nut, fruits, cakes, hot and cold snack platelets - just brilliant! Butler Kamlesh, was always present here, along with the Butler team, so I guessed I have met the entire Butler team, which is omnipresent and always great! EMS Wellness Indulgence As part of the in-hotel experience, we also experienced an EMS gym training by our trainer Tim; InterPulse Fitness partnered with Intercontinental Singapore to offer an Electronic-Muscle-Stimulation (EMS) training program. Led by an international team of professional coaches and adopted by pro athletes, the training gave us a high-intensity, whole body workout using low-frequency electrical impulses to stimulate muscle groups often missed in conventional training sessions, and it was absolutely fun, and certainly a fantastic workout! Held at the gym at InterContinentalSingapore, each EMS program is only 45 minutes but is equivalent to a four-hour-long workout while being gentle on your joints. The results are increased metabolism, strength and toning, weight loss and reduced fat, muscle gain and injury recovery, and we could feel the EMS pulses on our hands, thighs, ribs, stomach and back, truly rejuvenating, and a synthesized massage-fitness session, I call it! As the name denotes, EMS emits low-frequency impulses that reaches deeper muscle groups by contracting the muscles during the workout. Origins - Background and Introduction Ninth-generation winemaker Dominique Portet chose the cool climate of aptly named Coldstream in the Yarra Valley as home to the eponymous winery he founded in 2000. It was the culmination of a tenacious search for grapegrowing terroir to rival that of his native Bordeaux – but also the start of a new chapter in a winemaking story that has its roots in France in the early 1700s, and so the origins of this awesome lovely wine brand has its humble beginnings liked to the wineyards in France. Currently his son Ben Portet – generation 10 – heads the winemaking team, firmly observing the central tenets of this young yet historic estate: respect for tradition, understanding of site and an open mind towards contemporary practices that shape wines that are ever more refined and delicious. We had the wonderful opportunity to visit, taste, tour and sample the lovely variants from the different vintages from Dominique Portet, one lovely morning in July 2023. Dominique Portet - the Man himself Dominique Portet got his first whiff of wine at one of the world’s most illustrious wine properties: Château Lafite-Rothschild. It was here in Pauillac that his father, André Portet, served as régisseur (vineyard & winery manager). Dominique went on to earn his stripes at Montpellier University of Oenology before perking up morale as wine-buying adviser during compulsory military service. He later spent vintages in the Médoc, Rhône Valley, Provence and with Champagne giant Moët et Chandon, as well as in the Napa Valley at his brother Bernard’s Clos du Val estate. "I found fragrance and structure – most of all the structure reminds me of Bordeaux. The Yarra has a charm, a beauty that engulfs you. The wines are worldly." Since 1976 he has been a pioneer of the renaissance of Australia’s cool-climate wine industry, founding renowned sparkling wine house Taltarni in the Pyrenees and Clover Hill in Tasmania. In 2000 he embarked on his greatest adventure: the Dominique Portet winery in the Yarra Valley. Understanding a brand and comprehending a vintage, requires a good review of the terroir, the terrain, the climate and environment and along with it, the winemaker's style, training and cultural charisma that governs the delivery of a particular wine style, so aside from understanding the original winemaker of Dominique, we also take a look at Ben's training and wine style origins... Ben Portet - the new generation Along with the incredible lineage and pedigree that comes with being a 10th generation winemaker, Ben has benefited from the wisdom and experiences of many. That began with four vintages at the renowned Adelaide University finishing school of Brian Croser and Con Moshos at Petaluma in the Adelaide Hills. Internationally he has worked with Philippe Blanc of Bordeaux’s Château Beychevelle, in Reims with Louis Roederer and honed his skill with Syrah in Hermitage working with M. Chapoutier. His "new world" experiences include South Africa’s Stellenbosch Warwick Estate, as well as a stint in California’s Napa Valley artisan St Helena winery Vineyard 29. Since returning to the Dominique Portet Winery in 2008, he has not only continued 40 years of pioneering family wine craftsmanship in Australia, but also been a leading industry judge, completing the Len Evans Tutorial scholarship in 2017. The Label The arabesque form that adorns the labels is designed by celebrated Greek jeweller Ilias Lalaounis. The shape suggests grace, strength, purity of line. It symbolises the close bonds between generations, families and continents. The design derives from a pair of earrings worn by Dominique’s wife, Julia, who met the Lalaounis family when she was a student. Their friendship has grown over the decades. Ilias Lalaounis is the only jeweller to be welcomed as an associate of the Académie des Beaux-Arts of the Institut de France in Paris. He has boutiques in Athens, Paris, London, Geneva, Zurich, New York, Hong Kong and Tokyo. His work has been exhibited in New York, Washington DC, Paris and at the Pushkin Museum of Fine Arts in Moscow. NV BRUT ROSÉ Dominique Portet was instrumental in highlighting Australia's potential for sparkling at Clover Hill, Tasmania. That dedication continues with this highly acclaimed sparkling. It's light, fresh, and, as James Halliday notes, "A totally delicious and elegantly poised wine…" 2022 FONTAINE ROSÉ Long regarded as Australia's first true Provence style - and arguably most successful - dry Rosé. Pale pink with ripe fruit, a creamy and generous mouthfeel, followed by lip-smacking acidity on the long, dry finish. 2016 VENDANGES TARDIVES Grown on the cellar door site in Coldstream, this Sauvignon Blanc based dessert wine is a beautifully balanced wine with a wide spectrum of aromas and flavours. All while still being appealing fresh with modest sugar levels that make pairing this wine easier and gives much diverse application both on its own and with food. Made in a classic French Sauternes style picked when the fruit hits the botrytis point in the cool months of May with much higher sugar levels than a drier style of Sauvignon Blanc. 2022 FONTAINE ROSÉ MAGNUM Long regarded as Australia’s first true Provence style - and arguably most successful - dry Rosé. This has been a mainstay of Dominque Portet since the beginnning, and is now stronger than ever thanks to Rosé’s global success. Pale pink with ripe fruit, creamy mouthfeel and crunchy acidity - it’s everything you’d want from a Rosé. 2022 SINGLE VINEYARD CHARDONNAY It’s a rich, rounder style than we usually produce, with power, opulence and texture balanced by crisp natural acidity, adding freshness and poise. Plenty of concentrated red berry fruits and bramble, refreshing acidity and fine tannins give the wine a silky texture and a long finish. 2022 SINGLE VINEYARD CABERNET FRANC Bright pale ruby, leafy blackcurrant, earth with some oak smoke and red fruit. These combine perfectly with sour cherry, cranberry and red plum with very light tannins and fresh fruit flavours of raspberry and red apple. Structurally generous and open, the drive comes from elevated acidity integrated perfectly. This year the wine is showing more medium bodied character and finesse, announced through silky fine tannin structure and balanced acidity through to the finish. 2019 DOMINIQUE PORTET CABERNET SAUVIGNON 2019 will go down as one of the great vintages for accessible, bright and fragrant Cabernet. Everything came into balance - The fruit is dark, brooding and mouth coating; the tannins are svelte and long; the acidity is clean and refreshing. It all intertwines seamlessly, to give us a wine we consider to be bright, detailed, elegant and fine. 2015 ANDRÉ CABERNET SAUVIGNON The pinnacle of the Dominique Portet wines, André is made only in exceptional vintages - 2015 is only the 6th release. It is named after Dominique Portet’s father and Ben’s grandfather, 8th generation winemaker and former Technical Director (vineyard and winery manager) at the esteemed Château Lafite-Rothschild in Pauillac, Bordeaux Cellar Door Set amongst the beautiful rolling vineyards of the Yarra Valley, their recently renovated cellar door is open daily from 10.30am to 5pm (closed Public Holidays).
