Truly a hallmark of distinction and true finesse! Extraordinaire! The fact that entrance lobby parking was specially arranged for me along with another wedding car showed the exemplary service reserved for special patrons of this hotel! So refreshing! Lobby Lounge Tastefully partitioned from the main lobby, this is the place to be for an unhurried afternoon, and so we chose to spend some time here. Enjoy light bites, Asian favourites, alongside a discerning selection of wines and cocktails - all amidst a tranquil and elegant setting. Or, relish the exquisite Afternoon Tea showcasing delicate sweet and savoury items for a relaxing afternoon, or sample a delicious Proseco to go along with the yummy bites, which we did, to full delight in this comfortable setting with plush seats, a good place for chatting and good fun! We sampled the breakfast one late morning (breakfast is between 6:00am to 10:30am) and loved the Asian assortment of tim sum, prawn noodle soup, chinese porridge, cheeses, ham assortment, and an entire array of Breakfast egg delights, trying out both the egg benedict of salmon and fresh ham, and the home-made Hollandais sauce was simply wonderful, made especially by the chef. We sampled this amazing buffet spread consisting of the cold seafood section. The freshest Snow Crab Leg, Tiger Prawn, Blue Mussels, and Seasonal Oysters is paired with unique condiment choices such as Thai assam vinaigrette, yuzu ponzu, cilantro and lime emulsion (so amazing). Our Sashimi platter comprised of a selection of the highest quality grade Tuna Akami, Hiramasa Kingfish, and Norwegian Salmon. A variety of the finest artisanal cuts grace the Charcuterie and Cured Fish Station. These include Beef Bresaola, Wagyu Pancia, Mortadella Bologna Pistachio and Jamón Ibérico De Bellota. We sampled and savoured both Hot Smoked Salmon and Smoked Haddock, both served with side options such as horseradis cream, Lilliput capers, marinated olives, and anchovies. Just brilliant! Save room for dishes from the Pasta & Noodles section. Make your own pasta with a choice of capellini, fettuccine or macaroni, to be cooked a la minute in sauces such as the luscious aged cheddar cheese sauce, Asian aglio olio with a mild spicy kick, classic basil pesto, decadent black truffle cream, and the fusion yellow curry cream, this was such a fantastic idea to allow for a DIY pasta selection based on your own personal fave concoction - chef for a day! 15 Stamford's Signature Laksa, was also served in the noodles section for a bowl of rich, slurping goodness, and I am elated that I went for it! Just delicious! Jazzing up the usual repertoire of buffet classics, 15 Stamford by Alvin Leung presents a luxurious foie gras station serving Pan Seared Foie Gras topped with Banana Rum Marmalade. 15 Stamford by Alvin Leung is known for its hot coal grill, so the Tropical Sunday brunch would not be complete without Grill Carving and Rotisserie Spit Roast sections. We tried a plethora of succulent meats and seafood, chargrilled to perfection. Pile your plates high with Wagyu Beef Chuck, Angus Beef Ribeye and Wagyu Beef Hanger Steak, freshly carved from the grill, alongside spit-roasted Wild Snapper, Roasted Duck, and Pasture Fed Lamb Leg. Amplify the flavours of the fork-tender meat with an array of sauces: adobo butter sauce, wood-smoked barbeque sauce, Asian chimichurri, Sarawak blackpepper sauce, mentaiko hollandaise and cilantro olive., there were 9 to choose from .. Meanwhile, the seafood grill will include White Clams, Spring Bay Mussels, and Tiger Prawns, and we rounded off the brunch on a sweet note with a selection of desserts. Guests can choose between three ice cream flavours: Chocolate Fudge, Thai Coconut, and Calamansi. There is also a Chocolate Fondue with roasted almonds, Valrhona chocolate balls, and seasonal fruits for dipping. We also relished and went for the some of the meticulously crafted treats such as Yuzu Meringue, Matcha Financier, Lemon Purple Velvet Mousse Cake, Pandan Fudge Cake, Raspberry Profiteroles, Assorted Macarons, and Peranakan Kue In addition, 15 Stamford by Alvin Leung also featured a rotating selection of five premium seasonal cheeses every week, from Fourme d'Ambert to Roquefort, Grana Padano, Reblochon and Goat Cheese, which was presented alongside accompaniments such as crackers, lavash, quince paste, grapes, muscatel and honeycomb. Our Tropical Sunday Brunch was only complete when it became a sparkling affair with a whole series of free-flow champagne courtesy of Telmont. The official champagne partner of 15 Stamford by Alvin Leung, Telmont is a champagne house that has always showcased its singularity. Fog Cutter is a vintage tiki cocktail incorporating Bacardi Anejo Cuatro 4 Years Old Rum 4-Year Old Rum, Bombay Sapphire Gin, orange juice, sherry, lemon and almonds for a fruity drink with a punch. Another tiki classic, the Mai Tai combines Bacardi Oakheart Spiced Rum with lime juice, triple sec, almonds, and Bacardi eight-Year Ocho to create a tart and strong cocktail with hints of citrus. Lastly, Jungle Bird features Bacardi Anejo Cuatro, pineapple juice, lime juice, and Campari for a refreshing drink. This amazing and beautful concert took place on Friday, 20 October 2023, 7.30pm at the Esplanade Concert Hall; we were treated to an evening of calm, finess, peace, calm, tranquility and amazing tonality as the concert hall resonates the beautiful sounds of SSO in Tchaikovsky 4. Robert Russell Bennett (1894 – 1981) is the American composer and arranger best known forinventing the Broadway sound, credited for orchestrating the musicals of such famous composers as Irving Berlin, George Gershwin and Richard Rodgers. His violin concerto, a rarely heard work from 1941, shows its roots in film and stage with expressive drama. Join British violinist Chloë Hanslip and American maestro Andrew Litton as they present this underrated gem, with Tchaikovsky’s tumultuous symphonic masterpiece, the Fourth Symphony in the second half. Robert Russell Bennett belongs to that class of composers who elevated the melodies of his colleagues to their fullest form. As one of America's leading arrangers, he was responsible for scoring and orchestrating the scores of nearly a hundred musicals. From the 1920s to the 1970s, the list of composers and scores Bennett worked with is the very definition of the American Broadway sound - Richard Rodgers, George Gershwin, Jerome Kern, Irving Berlin, Cole Porter, Frederick Loewe... The Sound of Music, Show Boat, Kiss Me, Kate, Oklahoma!, South Pacific, The King and I, My Fair Lady, Victory At Sea and so on. "I give (Bennett the credit) without undue modesty, for making my music sound better than it was."- Richard Rogers Bennett was born in 1894, the year when Brahms was 61, Mahler completed his Symphony No. 2 and Debussy's Prélude l'après-midi d'un faune was premiered in Paris. His father George was a violinist at the Kansas City Symphony Orchestra and trumpeter at the Grand Opera House, while his mother May worked as a pianist and teacher. His musical talent was discovered from an early age - he was frequently called upon by his father to fill in any instrumental role in his band. His talent for melodic and harmonic structure served him well as an orchestrator - he was known to write out parts directly in ink, and in score order. Besides his work on Broadway, Bennett's prolific output as a "serious" composer is perhaps even more astounding. More than seven symphonies, concertos for violin, viola, harp, piano, harmonica; operas, incidental music for ballet and theatre, a large oeuvre of chamber music and many more for wind band. The Violin Concerto in A major from 1941 is a four-movement work. A light-hearted jaunt through a lively Broadway streetscape with occasional skyscraping solos, the opening Allegro moderato is the longest, taking up more than a third of the concerto's 23-minute duration. The Andante moderato is a sentimental nocturne with the violin yearning in song, set against a moonlit orchestral backdrop. A moment of drama interrupts this reverie as the soloist perks up for a side of cheekiness, before gradually slipping into the gentle night. A frantic and capricious Vivace serves as a brief showcase before the raucous finale, a colourful Allegro marziale ("martial") of a parade. Various themes from the earlier movements, the jolly and the nostalgic, make a brief reappearance before the curtain-closing coda. Bennett wrote his Violin Concerto for the American violinist Louis Kaufmann (1905- 1994). Aside from the fact that he played frequently with legendary contemporaries from Casals to Heifetz, Kaufmann also made a name for himself playing in the soundtracks of Hollywood films, including such classics as Casablanca and Gone with the Wind. As a classical violinist, he premiered the works of Copland, Milhaud and starred in the premiere recordings of the Barber and Bennett violin concertos. The latter, a live radio recording from 1956 conducted by Bernard Herrmann and the London Symphony, is the only existing recording of this concerto. Tonight's performance by violinist Chloë Hanslip, the Singapore Symphony Orchestra and conductor Andrew Litton is presented in conjunction with our recording sessions. The Bennett Violin Concerto will be recorded for the first time with modern equipment in a studio setting. Moussé Fils, "Les Vignes de Mon Village" Blanc de Meuniers, Brut NV100% Pinot Meunier Another family owned estate, with 4 generations of winemaking and 12 generations of growing Champagne, Champagne Moussé is celebrating a century of winemaking in 2023. Passionate about the environment and the land, the winery work towards being carbon-zero. It is a energetic and high-toned, with citrus notes of grapefruit and blood orange. The labelling is modern, the tonality and taste consistent of finesse. single grape* 3. Krug, "Grande Cuvée 171ème Édition" MV 45% Pinot Noir, 37% Chardonnay and 18% Pinot Meunier The 171ème Édition was composed around the harvest of 2015 which spanned 3 weeks, and is an orchestra of 131 different wines, the youngest being 2015 and the oldest being 2000. It has aromas of flowers in bloom, ripe, dried and citrus fruits, as well as marzipan and gingerbread. On the palate, smokey notes and flavours of almond paste, quince, lemon, limoncello and dried fruit. This is brilliant, wonderful and awesome; we love it and it can certainly stand on it's own' finesse re-imagined! Immaculate! Superb Blend* A Krug is a Krug! 4. Bonnet-Ponson, Chamery Coteaux Champenois Rouge 2018 Winegrowers since 1862, 6th-generation winemaker Cyril Bonnet crafted this project in recent years. It spends 3 weeks macerating in a concrete tank, with 1/3 of the Pinot Noir stems-on. This is a perfumed, light-footed and elegant red wine which shows the potential and future of Champagne as a wine-making region. First time sampling a wine from the Champagne region, and the result is packed with curiosity and distinction, palate refreshing! Food Accompaniment 1) Frogs Legs, with Fermented Red Beancurd, Ginger - this is so refreshing as we have never tasted anything like this, before, done in a fried structure, that spells amazement to the creativity of Chef Henry - it went so well with the premium champagnes we had.. 2) Lemon Sole,with Champagne Beurre Blanc, Pomme Purée, Samphire - again, another amazing dish, thoughtfully created, that can be consumed whole, crispy yet crunchy, with finesse to each bite 3) Prawn and Pork Tortellini, with Prawn Bisque, Chicharrón, Dill - to do this in a somewhat Italian style, but with a Singapore-chinese" introduction to its origin, is truly a hallmark, that goes with the style of the champagnes, we had for the evening! Fine and casual dining events, multi-chef cook-ups, and Kita Conversations, full-days of talks and forums for the F&B industry make up the essence of the Kita Food Festival - we had the fortune to go for the lovely Big Sunday Barbeque event. The Big Sunday BBQ is basically a big bash cook-up, where some of the most dextrous up-and-coming chefs in Singapore come together to cook over fire. It was a big mighty awesome...I would say...Pigout" with tons of BBQ food. There were multiple cooking stations-cum-pits, each with two chefs cooking up a feast. Pretty casual, with cheap drinks, heady vibes and more fabulously tasty food on a lovely Sunday noon time. The list of chefs include: David Tang (Rosemead) x Ahmir Arshad (Wildcard) Fariz Ramli (Revolver) x Matteo Ponti (Braci) Marcus Tan (FOOL) x Son Pham (Sonny’s Pizza) MJ Teoh (Native) x Sunny Leong (Wine RVLT) We tried all 8 courses prepared by the various chefs, We tried the BBQ Jac Wagyu Inside Skirt Steak, Bombay Chimichurri, King Trumpet, Bagna Cauda as well as the Smoked Scamorza Kulchette, Salsa Rossa with Smoked Sardines, by Braci X Revolver - it tasted smashingly good! We then worked out with ROSEMEAD × WILDCARD, where we had the Beef Tongue Taco, Smoked Bean and Salsa Negra - so good and also the Braised Oxtail Grilled Cheese, Dill Pickles, Hot Sauce - exquisite! Next up was the curation from Native X Wine RVLT where the 2 dishes of Grilled Baby Cuttlefish, Keluak Miso Mole, King Oyster Mushroom, Crispy Duck Floss and the Grilled Skate Fish, Okra, Sambal Vierge Sauce, both appealed deliciously to us! Loved the way how the squid was being prepared and by this time, we were already very full! Lastly, we worked on the culinary creations from FOOL × SONNY'S PIZZA, where theBBQ Eggplant Ssam, Braised Impossible Mince and Regional Herbs resonated well with our tasting panel, and the dessert component of Gin Baba, Guava, Kaffir Lime Chantilly was actually an amazement due to its influx of taste and diversity! Yummy! We left the BBQ Venue happy, elated and very satisfied! We went for an exclusive lunch at Restaurant Fiz as part of the auspices for the Kita Food Festival Singapore Weekender event with special guest Chef Hafiz from Fiz restaurant . The Kita Food Festival Singapore Weekender event will be held from October 19th -23rd and will be a series of four and six-hand fine dining dinners with some of the best Michelin and Asia's 50 Best Chefs and food thought leaders from around the world along with a Sunday BBQ event and Kita Conversations. Chef Hafiz and Chef Ivan will talk about the inspiration behind the Kita Food Festival, what guests can expect over the weekend, the lineup of world-class chefs and what culinary delights will be enjoyed. Our focus today is on Restaurant Fiz and as part of the Kita Food Festival, we were super thrilled when we were invited to partake of its culinary goodness. Restaurant Fiz on 21 Tanjong Pagar Road is a tasting menu-only restaurant that opened in June 2023 that serves contemporary Southeast Asian cuisine. It sets out to be purposefully vast in its scope, sweeping across food cultures from the ancient steps of Angkor Wat to the lush highland valleys of Sarawak, and we can feel this depiction around the walls of their decor, their culinary menu and expression, and the vibes permeating throughout the walls of this venue! This approach is Chef-Owner Hafizzul Hashim's opus to the boundless beauty of the region after having spent two decades working across the world in Michelin-starred restaurants and beyond. He draws from the knowledge of societies past and present, funnelled through a series of menus that convey the warmth and comfort of communal dining. The result is a contemporary gastronomic oeuvre experienced in a thoughtful space inspired by the architectural features found in places of faith around Southeast Asia. Having spent over 20 years working in kitchens in Kuala Lumpur, London, Tokyo, Ho Chi Minh and now Singapore, and sharpening his knives in Michelin-starred kitchens like Mirabelle and Chez Bruce as well as Jean Georges in Tokyo, Chef Hafizzel turns to Southeast Asian cuisine after an illustrious international career. Chef-Owner Hafizzul Hashim harnesses ancient knowledge as the springboard to his cuisine. The restaurant represents the region's diversity with changing menus known as "Episodes" that spotlight the geocultural entities that call Southeast Asia home. Each dish is the result of extensive research into the history and foodways of Southeast Asia, with flavours and techniques gleaned from across the culinary landscape. - Kita Food Festival 2023 - featuring Matt Stone (Mosey On Inn) x Peter Smit (Underdog Inn)
As part of the larger Kita Food Festival in Singapore, 2 amazing Australia’s hottest in-the-moment chefs: Matt Stone, lauded as the Antipodes’ most sustainable chef, and Peter Smit, the chef of nose-to-tail hotspot Underdog Inn, were brought in exclusively, for a wonderful evening of sustainable-based cuisine. For two nights only, on October 20 and 21 2023, the tattooed twosome cooked together at grungy Amoy Street restaurant, Underdog Inn. Drawing inspiration from Australian native ingredients and the country’s natural beauty, Matt Stone’s cooking revolves around striving to minimize waste and employ creative methods to get the most from every ingredient – a skill he honed during his time working on the acclaimed Futurefoodsystem project in Melbourne. A bird of the same feather, Peter Smit aims to utilise every part of the animal he is cooking, with a special focus on the often discarded or superfluous offcuts. Together, they formed a formidable pair dishing out our awesome meal for the evening... We sampled the crocodile toast, garum and chilli, and then the chicken skin terrine, mackeral nduda, fried globe artichoke and stracciatella, and it tasted super awesome! Next, we tasted the seawood cured roo tartare followed by the vertical ocean prawn crudo, cucumber and jalapeno, so yummy! This was then followed by the pork liver sausage, smoked bear, squid bolognese, and then came along the pork tongue melangé nicely with green sauce (that Nadia loved so much) and sourdough vegemite. Included in our tasting portion was lamb, shitake, Cameron Highlands asparagus (the uniqueness displayed as part of the thematic origins as part of the entire food festival), then pork and kohl rabi, griller kraut, and this paved the way for the next dish, bulls heart, tomoto, fig and farmers cheese. For dessert, we tried the koji rice pudding, mangosteen and passionfruit, to end off a fantastic evening! Executive Chef Pete Smit (Australia) and his team showcases their bold take on open-fire gastronomy. With this menu, minimal waste is creatively enforced as they practice whole animal butchery. This gives way to a rather extensive daily Specials menu, on which you might find house-made sausages, green lip mussels, confit duck and other atypical eats. And of course, the main menu of cuts from land and sea will always be ready to fire.
