  • FHA-Food & Beverage 2025

The highly anticipated Food & Hotel Asia – Food & Beverage (FHA-F&B)  event officially opens today, reaffirming its position as Asia’s premier international food and beverage platform. With an expected 65,000 attendees from both local and international markets, FHA-F&B is set to once again unite industry professionals, culinary innovators, and industry leaders under one roof. This year's show was as exciting and purposeful similar to all previous years, as global F&B veterans, existing and new, all converged on this amazing global event based in Singapore. Held as a four-day event from 8-11 April 2025 , the event was inaugurated with a distinguished guest lineup, including Mr. Alvin Tan, Minister of State, Ministry of Trade and Industry; H.E. Allaster Cox, Australian High Commissioner to Singapore; Chef Andy Cuthbert, President of WorldChefs; Ian Roberts, Vice President Asia, Informa Markets; and over 300 esteemed guests.   "I’m proud to share that over 70 Singapore companies are showcasing at the Singapore Pavilion at FHA F&B 2025. Our companies carry with them the strength of the Singapore brand— a mark of quality, innovation, and excellence. In a more uncertain, fragmented, turbulent world, our food manufacturing sector must continue to stay global, stay creative and stay green." said Mr. Alvin Tan, Minister of State for Trade and Industry. More than 1,600 exhibitors from 50 countries  are showcasing their innovations and solutions, marking this as the largest gathering of its kind in the region. The event’s 12 dynamic segments offer attendees a rich and diverse experience, covering everything from cutting-edge gastronomy to sustainable industry practices. These segments are designed to meet the evolving needs of culinary professionals and food enthusiasts alike. We found an interesting beverage termed DRYK , a Danish brand, a plant-based drink that stems from a vision dedicated to preserving nature and combating climate challenges; crafted from 100% plant-based ingredients sourced from the finest Scandinavian raw materials. We tried the DRYK Oat Cocoa, which is their plant based cocoa made from oats. It has a lovely, creamy consistency and a rich taste of cocoa; the cocoa they use in their plant drink is Rainforest Alliance certified. The main focus of Rainforest Alliance, is to preserve both wildlife and environment in rainforests worldwide, while securing ecosystems and sustainable development; Rosette Media is a strong supporter of ESG and sustainability and preservation so it concurs and our philosophies align in sharing this amazing product from Denmark. At this show, we took particular interest in the offerings from the a branded Meat Supplier and Olive oil suppliers, mainly Greece, Italy and Spain, with their primary showcase on their Early Harvest, Extra Premium Extra Value Olive Oil, and we reviewed their packaging along with the bottling whilst assessing their price-fit quality-fit ratio for the Asian countries. These included brands like Betis from Spain, Askras and Alonis from Greece and Zucchi from Italy . From the meat produce section, we took particular interest in the showcase of their special pork, from the Mangalica pig breed native to Hungary , from Agrar Marketing Centrum , which is highly regarded for its delicious, marbled meat and rich, buttery fat; we had a taste sampling of this amazing produce, and we were thoroughly impressed with the tenderness and quality of the meat texture. Australia as the Partner Country   In 2025, FHA-F&B proudly presents Australia as the   Partner Country , in collaboration with The Australian Trade and Investment Commission (Austrade). “As Partner Country of Honour at FHA F&B 2025, Australia is proud to showcase the strength of our food and beverage industry on this global stage. Our longstanding partnership with Singapore — built on quality, sustainability, and shared ambition — continues to create new opportunities through strong trade ties and the Australia-Singapore Comprehensive Strategic Partnership,” said H.E. Allaster Cox, Australian High Commissioner to Singapore. The Ambassador drew a strong trading collaboration between Singapore and Australia and this certainly bodes well for the F&B Trade flow between the 2 countries.   The Australia Pavilion, located in Hall 8, is home to over 120 exhibitors, showcasing the country’s rich culinary heritage, innovative food trends, and vibrant brewing culture. From premium meats and dairy to pioneering food technologies, attendees can explore a wide range of products and innovations. Highlights include live cooking demonstrations, a Meat & Livestock Showcase, cocktail-making sessions, and CSIRO’s Venture Exchange Program: Future Food 2.0, where Australian agri-food startups pitch their groundbreaking solutions. We took particular interest in the Honey section and sampled the produce from Blue Hills Honey, from Tasmania with particular focus on the Leatherwood Honey - Winner of “World’s Best Leatherwood” for 2024. Often referred to as the King of Honey and the Honey of Kings, leatherwood honey’s bold, complex and unique flavour can best be described as “tasting like the rainforest”. This is because the wild rainforests of Tasmania are the only place in the world where the rare leatherwood tree ( Eucryphia lucida)  grows. Since 1955, the Blue Hills family has had the privilege of sourcing this highly sought after honey from the heart of the Tarkine wilderness, an area known for its ancient forests and the world’s cleanest air and water.   SG60: Building a Stronger Singapore The event shines a spotlight on over 80 local suppliers and farmers, underscoring Singapore’s commitment to fostering a resilient food ecosystem. Aligned with the national Green Plan 2030, the exhibition showcases the contributions of homegrown brands like Toh Thye San Farm, Chee Seng Oil Factory, Lim Joo Huat Enterprise, and more, as part of the nation's drive for sustainable, local entrepreneurship. Seminars and Thought Leadership The seminar series kicked off with resounding success, featuring nearly 40 sessions hosted by over 65 thought leaders from prominent institutions including Bioprocessing Technology Institute, A*STAR, B Lab Singapore, Society for Cellular Agriculture, and top universities like Nanyang Technological University and the National University of Singapore. These sessions offer invaluable insights into the latest F&B trends, innovations, and sustainability efforts shaping the future of the industry.   Reshaping the Beverage Consumption The Southeast Asian beverage market is undergoing a dramatic transformation, fueled by the rising popularity of the “sober curious” movement. As demand for low- and non-alcoholic options soars, FHA-F&B introduces the Zero-Alcohol Beverage Space at Hall 8, showcasing the latest innovations in this rapidly expanding sector. A standout highlight is the inaugural Zero Mixology Challenge, which invites mixologists to craft creative, non-alcoholic drinks. This competition serves as the Asia Selection round for the international finals in Shanghai. In addition, FHA-F&B celebrates the art of mixology with its National Cocktail Challenge, further cementing Singapore’s reputation as Asia’s cocktail capital. Top bartenders will battle it out for the prestigious opportunity to represent Singapore at the renowned World Cocktail Championship in Colombia. New additions to the FHA Culinary competitions include the rolling out of the first individual segments of the competitions, divided into   Individual Challenge Culinary  of Practical Hot Cooking with Poultry, Seafood, Vegetarian, etc,  and Individual Challenge Patisserie with competition segments such as Restaurant Dessert Challenge, Practical Cake Decoration, Petits Fours, Pastry Showcase, Artistic Sculpture, and more.   “FHA F&B 2025 continues to be a vital stage for culinary excellence and global collaboration. It’s inspiring to see chefs, producers, and innovators coming together to shape the future of food,” said Chef Andy Cuthbert, President of Worldchefs.   The challenges will this year be judged by teams of esteemed panels led by Chief Judge Otto Weibel (SG) . He will be supported by other chef judges like Rudolf Muller (SG/CH), Frank Wedmann (DE), Sven Erik Renaa (NO), Clinton Zhu (CN), Chern Chee Hoong (MY), and Anderson Ho (SG) .   At the National Team Challenges, trade visitors get to tune in to a two-part competition in which top chefs from various countries will participate over two days. Participating countries are Australia, Azerbaijan, China, Indonesia, South Korea, Malaysia, Singapore, Taiwan, and Thailand.   Chefs are required to partake in: Restaurant of Nations Hot Kitchen Challenge, where each team is required to prepare 55 portions of a three-course menu, Chef’s Table Challenge, featuring teams dishing out a menu composition that best represents them, and Battle for the Lion is a live cooking challenge where the top three national teams battle it out with a 3-course meal with mystery ingredients.   FHA-F&B continues to be the definitive platform for the food and beverage industry in Asia. Whether it’s exploring the latest trends in food innovation, experiencing live culinary competitions, or engaging with global experts, attendees are guaranteed an enriching, inspiring experience.   “Looking ahead to 2026, we are excited to announce the co-location of our Food & Beverage and HoReCa events. This combined show will span all 10 halls, showcasing the future of food and hospitality and putting FHA at the heart of Asia’s F and B scene, creating relationships that last and delivering knowledge that’s valuable", said Ian Roberts, Vice President Asia, Informa Markets. https://foodnhotelasia.com/

The Whisper Room , the elegant lounge nestled within the dynamic multi-concept Centre Of The Universe (C.O.T.U)  at Raffles Place, unveils its High Tea program, Exploration of Japan High Tea , a tribute to country’s most treasured seasonal flavours. Designed for those with a taste for the exquisite, this afternoon affair takes guests on a journey through Japan’s celebrated regions, showcasing delicacies crafted with precision, honouring the country’s rich culinary heritage with contemporary finesse. A High Tea Journey Through Japan’s Exquisite Ingredients Curated by Chef Alex Craciun, each treat pays homage to Japan’s most prized ingredients. The menu includes Bass Strait & Stone Axe Wagyu beef tartare (which was just simply sinful but it tasted so good), delicately complemented with aged mirin, ikura, and truffle, bringing together the richness of Japanese flavours. The Chitose cherry tomato tart with whipped goat’s cheese (no heavy flavours though) highlights the pristine produce from Hokkaido, known for its exceptional dairy and vibrant produce. We enjoyed this luxe affair one fine afternoon, and were totally amazed and taken by surprise by the use of premium ingredients, styling and curation excellence at the Whisper Room; having been here before, and because we love to come to this venue, it was truly a captivating affair for us, to partake of this awesome Exploration series of Japanese-styled High Tea. Sushi and Savoury Delights with a Contemporary Japanese Twist For sushi lovers, C.O.T.U’s signature pressed salmon, akami, and chutoro sushi features nori tempura, sushi rice, avocado lime, spicy mayo, and cucumber, offering a refined take on Japan’s renowned sushi traditions; this is a fresh take of what we usually eat, so the preparation of this dish fitted the dynamics of our Japanese treat! A refreshing contrast comes with the Japanese slow-roasted sweet potato salad with smoked toro, a dish that celebrates the natural sweetness and depth of umami found in carefully sourced ingredients. Sweet Temptation with Japanese Elegance On the sweeter side, the ceremonial grade matcha & Chitose strawberry roll is enhanced with Madagascan vanilla crème chantilly, creating a sublime and delicate balance of flavors. The eloquence of this roll was just perfect, delivering the right punch of flavours that illuminated my afternoon tea culinary experience! The Okinawa crème caramel, infused with kokuto black sugar, pays homage to the deep, molasses-like sweetness that is a hallmark of the Okinawan islands. The decadent chocolate layer cake, featuring layers of milk chocolate crème and dark chocolate genoise, adds a rich indulgence before transitioning to the Hokkaido passionfruit cheesecake with macadamia nut base, showcasing the region’s world-renowned dairy. To finish, the Mikan orange madeleines from Wakayama, finished with a dark chocolate and orange zest glaze, offer a citrusy, bittersweet indulgence. An Afternoon of Refined Indulgence in The Whisper Room Housed within the intimate and opulent setting of The Whisper Room, the Exploration of Japan High Tea service is a symphony of flavour and elegance. To elevate the affair, guests will be welcomed with a glass of bubbles, making it an indulgence befitting the most discerning palates. Chef Alex said, “The Whisper Room is a place of quiet indulgence, where the hushed glamour of a New York jazz lounge meets the vibrant soul of Tokyo. Our High Tea menu embraces that duality, presenting Japan’s most exquisite ingredients executed with both precision and creativity. Every element is carefully considered, much like the room itself, to offer an experience that feels both deeply rooted and refreshingly unexpected. Paired with sweeping views of the Marina Bay skyline, this high-tea offering promises an afternoon of sophisticated relaxation.” We always enjoyed the interiors within The Whisper Room, and the design is just eclectic and amazingly gorgeous with the right colour intonation to match the seats, decor and lighting features. A Spirited Pairing: Cocktails Inspired by Japan’s Finest Flavours To further enhance the journey, The Whisper Room presents a refined selection of elegantly crafted cocktails, each designed to complement the flavours of Japan. The Nashi (SGD16), inspired by Kyoto, offers a delicate balance of Kakubin Whisky, sencha, and poached nashi, layered with sake and vanilla matcha froth, creating a drink that is fruity, tannic, and round on the palate. From Kumamoto, the Chitose High pairs Kyoho grape oolong-infused. shochu with Chitose tomato, dill, and tarragon, finished with a light fizz for an umami-rich, herbaceous experience. For a refreshing and vibrant option, The People’s Drink, a Tokyo-inspired creation, features Roku Gin with house-brewed strawberry genmaicha soda, topped with basil foam and frozen cucumber snow, offering a fresh, toasty, and fizzy profile. We find this cocktail creation simply exquisite, so I had 2 glasses of it, refreshing yet demure! The elegance of this beverage shines through, with a crispy clean taste, alluring and makes me wanting for more, much more! The Tsuru Fizz from Kyoto is a decadent combination of hojicha cream, vodka, Maldon salt, hazelnut, and white cacao, delivering a creamy, savoury, and indulgent sip. For guests who prefer a classic pairing, The Whisper Room also offers an elegant selection of teas starting from SGD6, as well as coffees from SGD5, ensuring every guest finds the perfect complement to their high-tea experience. The Exploration of Japan High Tea  is available from Tuesday to Friday from 1.30pm – 4.30pm priced at $68++. More information of The Whisper Room and of C.O.T.U. https://www.cotu.co/

The wellness space was amazing for one to indulge in spa and wellness activities and the design is simple aesthetic, captivating and bursting with nuances of greenery and lushness. Meeting/Event Spaces Artyzen boasts 3 meeting and event spaces on the same level as Quenino by Victor Liong, and these meeting facilities are superb for corporate meet-ups, seat between 18 to 60 pax with breakfast/luncheons, and come equipped with meeting-ecosystem, food and bar amenities. Quenino by Victor Liong Quenino is derived from the term ‘little one’ in Malaccan Creole Portuguese and I attempted to seek the meaning on the internet, but realized this proper noun is a reflection of the heritage and authenticity of the region’s culinary tradition, with the base at Artyzen. Quenino by Victor Liong is helmed by acclaimed chef Victor Liong from Melbourne together with Singaporean chef de cuisine, Sujatha Asokan, who was instrumental in preparing our dishes one lovely weekend evening. This degustation menu-only restaurant is a celebration of Asia’s culinary diversity, playfully serving up elements from across Asia while paying homage to their roots and I must say, their service staff, aptly called Service Hosts, were very well-trained and hospitality is truly at the core of their service ethos; one of my best experiences! We had a choice of the 7-course or 9-course menu and since we were full from lunch, we chose the 7 course Focus Menu; it's truly Asian inspired with a touch of Modern influence and comprised of a curated blend of Contemporary Asian Cuisine. The starter comprised of a set of Quenino Prelude as rightly termed, with a Chef's choice of three seasonal amuse-bouche : refreshing and certainly a meal starter for us. The Scallop dish was blended well in a neutral format with the lovely ginger flower and tamarind, lending an equitable presence to the kesum and enveloping the tomato texture to the scallop originating from Hokkaido.. just exquisite! Quenino by Victor Liong | Culinary and Service team House-made Flatbread : The Wagyu full-blood, of course, is well mélange with the green chilli as it packs an acidic punch to deliver a umami-centric composure to this dish; whilst we were just resting on the laurels of the warm fluffy flatbread, we literally craving for more.. what an excellent concoction! When they bought in the Yellowtail Kingfish, the crispiness of the flakes, combined with the lemak was truly well tossed with lemongrass that sits on a bed of passion fruit, which is pretty fascinating, as the flavors get submerged straight into the crispy-fried skin of the yellowtail whilst basking in the full glory of this pan-seared dish, somewhat very fresh, with sufficient bite and excelling in the taste department with the juices flowing through the drizzled sauce. The “Fried Rice” is a unique dish that was presented at this restaurant - the multiple garnishes accompanying this “mui-fan dish bring a different perspective as one is introduced to each garnish, ranging from chive radish, tamarind chilli, fried betel leaf, cincalok marinated onions, battanga, ulam rajah, fried shallots, coriander and fried pork lard; the trick is not to mix this whole playful dish together, but to actually sample each condiment one at a time with the rice, to appreciate each diverse flavour and in the process, appreciate the condiment and how it mélange with the rice. Truly innovative and super experiential! The course ended with a refreshing Taro Ice Cream , to clean the palate; consisting of fermented rice wine, roselle and sweet potato, yummy! Cafe Quenino We had a Singapore Traditional Teh C with our breakfast, and it was fascinating as they bothered to explain the concept and different variations of the Singapore Coffee and Tea beverage on their menu, to discerning visitors; the breakfast came with a curated set of Granola and Fruits, adding spice to my morning regime. Aside from the buffet spread of fruits, bread (local kaya and butter), pretty delightful, we were given a choice to have a curated Main Plate, so we chose the Chilli Crab Omelette, which was a wonderful concoction of blue swimmer crab, coconut basmati rice and their house-made sweet and spicy chilli sauce. The Avocado and Tomato Toast was on-point, with a good spread of smashed avocado, heirloom tomatoes, buffalo mozzarella, black vinegar dressing on a warm sourdough. The juices and fruits were fresh and tasty! Staff Accolades We would like to give our sincere appreciation to Jeff Crowe, General Manager, Francine from the Marcoms team, Lysander from Front Office, Thas from concierge, both Julie n Gizher - Quenino along with Chef Sujatha, and also Carris and Thong from Cafe Quenino, for an absolutely marvelous stay, topped with excellent service and care! Sustainability A huge buzzword for modern hotels in the last decade, we were attracted to the hotel's ethos on practices that support ESG initiatives to reduce, reuse and recycle. In an active basis, the rainwater is harvested for irrigation purposes; there is passive cooling design throughout, thus reducing the need for the amount of air-conditioned spaces. They deploy NORDAQ glass bottled water so as to reduce plastic waste; there are Heeley bathroom amenities which come in aluminium bottles. Sustainable dry amenities, include the use of toothbrushes, disposable shavers, and combs, made from bamboo (we find this enlightening and fulfilling); there are Balconies and generous ceiling fans in every room to reduce greenhouse gases, but also providing for good ventilation (which I appreciate); there are solar-powered LED lamps dispersed throughout the hotel and rooms and bed linens are changed every third day. There is an on-going Partnership with Proof & Company to serve ecoSPIRITS (the world’s first low-carbon, low-waste spirits and wine distribution technology), a distinctive ESG initiative for the Horeca domain.
