FLUTES opened its doors in June 2004, in the quaint and charming old colonial black-and-white bungalow. Since then, good food, wine and service have been the hallmarks of The FLUTES’ Experience. Named as one of the ‘Top 101 Best Restaurants in Asia’ in 2013, FLUTES made a monumental move, after 9 years, to occupy the oldest section of the nation’s oldest museum, the National Museum of Singapore. Originally opened to commemorate Queen Victoria’s Golden Jubilee in 1887, FLUTES continues to bring fresh and exciting new flavours to our menu, layered with a modern twist, complemented with the selections from our award winning wine list, which comes from both the old and new worlds. With thoughtful versatility from the stylish high-ceiling dining rooms, to the relaxing outdoors, FLUTES offers diners and experience filled with possibilities. We dropped by one evening to try out their recently revamped summer menu by Executive Chef Peter Rollinson. We started the evening cocktails with Perrier Jouet NV Champagne. What a pretty table top setting with matching PJ candle and a nice flower vase arrangement. We orderd the first appetizer – Tartare of Beef with Quail Egg and Avruga Caviar. It was a brilliantly executed dish with the umami explosion of the Caviar balancing the acidity of the beef tartare. Next up was a Pan Fried Foie Gras with Hibiscus Poached Blueberries and White Chocolate. The barometer of any foie gras is that it must be crispy on the outside and oozing soft on the inside. This dish passed muster with flying colours, we must say. We were feeling hungry and decided to go for another starter. Pan Seared Atlantic Scallops with Cauliflower, Raisins and Sherry Gel. Crisp and juicy, it had none of the rubbery texture commonly found in other renditions. We were feeling really peckish and decided to order 3 main courses. Western Australian Marron Bolognaise with Capellini Pasta, Marron Bisque, Marron Oil and Tomato. The Marron was really fresh, juicy, crunchy and succulent, and paired really well with the pasta. Cape Grim Beef Tenderloin with Spinach, Salsify, French Mushrooms, and Sauce Perigord. Tender and juicy with some marbling and fats not typically found in Tenderloin. Kudos to Chef Peter for managing to pull this off. The final main course of the evening. Spanish Suckling Piglet with Apple and King Crab Salad and Pickled Turnip. As always, the skin of any suckling or roast pork must be crackling and crispy, and the meat soft and juicy with well defined layers of fat. This was amazingly executed we must say. To round off the evening, we had 2 desserts. Rhubarb and Apple Crumble with Vanilla Ice Cream. Marou Chocolate Fondant with Chocolate Mousse, Raspberry and Pistachio. The final verdict: The desserts were great and complemented the entire evening’s dinner experience. Will we return again? Definitely Yes! A lovely photo of our tasting panel - we are serious about good food! absolutely serious whilst having a great conversation on food origins, ingredients, life) and enjoying a tasty set for dinner, at Tempt (L-R, Candice - our host, private chef and owner of Tempt, Kenneth, Warren, Chavelle, Charlotte, Jin and Edward) Each time when I visit Tempt , my days of worries and stress is instantly removed as Candice brings out new ingredients sourced from different parts of the world and within in Singapore to the table, through innovation, trials and taste, to give meaning and purpose to each dish that is brought before me, and with an entire array of unique cocktails, spirits, champagne and wine; I am certainly spoilt for choice. Innovation makes me happy! Rosette Media Food Panel Rating : 9.3/10 (any score over 9 is an excellent rating) The Concept The conservation shophouse is fully exposed with its raw and industrial interior, including original brickwork from 1893. The cuisine is cross-cultured, drawing from the chef owner's years of gallivanting across the globe, enhanced by in-house fermentation of regional produce and old-school preservation techniques. It aims to TEMPT and entice the diner towards being open-minded to new flavours along with the bold variation of meats and cuts offered. The bar is agave spirits forward, with a small but well-crafted cocktail selection, which Candice is immensely proud-of, and we can tell why, because it truly is innovative and special; they also stock award-winning limited production sakes, and a wine list that encompasses both recognised labels and artisanal low-intervention wines. The Curated Menu On 30 July 2024, we visited Tempt again, to chance upon their new exciting 2024 seasonal menu and were treated to an amazing plethora of exciting dishes, prepared by their head chef, James Yap. Our first course was termed Tempt's Sexy Salad which is nice spin to express the charred crystal lettuce which is well tossed with tahini-miso- Peruvian pepper dressing along with homemade sesame crisps; the super crisp, fresh & sweet greens hail from an urban vertical farm, GroGrace which is gathered only several kilometres from Tempt. Next came long the Red Prawn Tartare , which was a distinctive Cauliflower mousse, melangé with smoked ikura, sea grapes, shoyu-dashi gelée and wasabi foam - all dashes of amazement from Japan. The third course is one of Tempt's "by popular demand" Kangaroo Tartare from Australia , and those who appreciate this meat ( I have lived and travelled across 6 States and numerous cities in Australia ).. would be game to sample the beautiful delight - no signs of any gamey-feel and strong inclination whatsoever.. with a juxtaposition of green peppercorn oil, toasted quinoa, pickled yellow beets, shoyu garlic puree, tarragon oil and crostini. The fourth representation is the Oxtail Croquette which was bursting with flavor in the form of an oxtail done up nicely in a croquette format with laksa leaf chumichurri (from Argentina & Uruguay ). Tantalizing! Brave! Superb! What came next was a pleasant surprise, an ozzing red yolk (gathered and prepared in a special manner), minced chicken, cabbage, potatoes, shallots, piccalilli ( UK )- the full works and it's basically a "cross between a scotch egg and bubble & squeak that's been one year in the making..." as aptly termed by Candice. So it's called the Scotch Egg . For the sixth course, we had the Chilli Crab Soup , which was a combination of Japanese king crab meat and laksa gelato (truly unique) and then a distinct flow of flower crab broth was then introduced, to surround the masterpiece - truly exquisite, full of umami and bursting with flavors and goodness! true chill crab broth style! Immaculate! What appeared next on our dining table was the Tagliolini Al Ragu di Rana Pescatrice ( Italian style) - a simple but delightful dish of monkfish ragu pasta with venus clams, yes simplicity is best and that's the way we love it! The Conchiglioni Al Cocco , brings about local Asian, Thai, Singaporean and Malaysian influences into the picture with an overflow of giant shell pasta nicely consolidated with a mildly spicy coconut sauce, kaffir leaf, lemongrass, fried tempeh and monkey head mushroom - such ingenuity in the choice of ingredients and originality! The 9th course brought out the Octopus al Cartoccio (which is truly special indeed), wrapped in the style of how they do Salt-baked chicken in some Asian restaurants, but with a nicely wrapped format, and unfolded literally - opened right in front of our eyes - the explosion of the smoked paprika-sake sauce sat very well with the slow roasted Spanish octopus, fingerling potatoes and the GroGrace wasabi-rocket salad. The 10th delight was an Eggplant Schnitzel , a crispy batter of Ajvar - Balkan pepper dip and seasonal salad - any vegetarian would love this! Brilliance always comes in vegetarian dish settings and this is no exception. I was so looking forward to the next dish, as we are beef lovers and Candice shared her stories on Wagyu with us, whilst we were going on with our Hanging tender - Wagyu Onglet - what an excellent cut, that was super tender, succulent and nicely prepared with all that smoked potato purée and squared off with charred broccolini and stuffed morels - simply delicious! The last dish before dessert was the mighty-termed *RM 5000 Tandoori Recipe , which was essentially a Red snapper that comes with a thick spicy mint sauce and fermented chayote - Candice's Dad bought this recipe done with chicken over an open fire at a pasar malam in Kuala Lumpur in the early 90s. She remembered this and kept it all these years for the right opportunity to showcase it... and finally they tweaked it to TEMPT their clients with fish or paneer.. of course, and ultimately, it's all about the spicy sauce!! We ran through an entire series of cocktails, along with some gorgeous wine and my favourite Champagne Billecart-Salmon throughout the entire course and ended with the lovely Tempt's Adult "Bounty" Bar, for dessert - looking so innocently tasty yet dangerous - comprising of s hredded coconut cream, Malibu coconut liqueur and dark chocolate shell. Cleverly executed piece of sweetness! The Sashimi quality Mediterranean octopus was nicely charcoal broiled with a fine texture, vibracy in the umami segment, and exuded freshness, typical in all dishes presented at Milos. Revel in the marvellous medley of tastes in Astakomakaronada – lobster pasta Athenian-style, featuring a hearty steamed lobster and linguine pasta covered in a savoury concoction of lobster bisque and authentic tomato sauce. We sampled this dish and we were truly taken aback by the taste, finesse and freshness of this lobster which was so succulent and juicy, and probably one of the best pastas we have tasted in Singapore! Meanwhile, the whole fish baked in sea salt is presented to the table where a delicate process of breaking the salt casing, fillet and plating unfolds, ensuring that dining at Milos goes beyond to impress gourmands and loyal fans alike. Inspired by the Greecian paradise, the beverage programme highlights seven cocktails that capture the essence of the islands. Greek flair also turns up a notch with three cocktails exclusive to Singapore. A rendition of the dirty martini’s timeless sophistication, Martini of the Gods combines vodka from Greece, umami bitters and olive brine, all shaken for ice crystals to form on top of the glass. The Demeter Sour executes a special interpretation of the classic whisky sour, with a robust mix of bourbon, pistachio syrup, creamy Greek yoghurt, fresh lemon juice and Angostura bitters, topped with eye-catching pistachio dust. The Santorini Sunrise embraces an alluring blend of grapefruit gin and Campari, complemented by freshly-squeezed grapefruit juice, honey from Kythira and mint leaves. We tasted this lovely beverage and it oozes freshness, fruity and full of zest and accompanied well on our tasting journey along with our starter, main course and dessert. Home to the widest variety of Greek wines in Singapore, Milos presents a unique wine programme of Greek wine labels from indigenous grape varieties such as Assyrtiko, Xinomavro and Agiorgitiko sourced from the volcanic terroir of Santorini to the mountainous slopes of the Peloponnese. We also tasted the watermelon cooler and it was an absolute wonder, in this hot climate in Singapore, so refreshing and utterly amazing! For desserts, we went for the Karydopita which is a Traditional Greek spiced walnut cake with vanilla ice cream - simply yummy! and also we had the Greek Yoghurt ice cream - a wonderful dish comprising of Thyme-honey from the island of Kythira and walnuts - truly exquisite and delicious to soothe our sweet cravings! An orchestra of Greek design elements Designed by Alain Carle Architecte, who also developed its restaurants at Las Vegas and New York, the concept of Milos Singapore embodies the simplicity in Greek architecture. From the monumental marble entrance made from Pendelikon marble, whose origin from Athens dates back to the Parthenon, to the cylindrical portico that evokes the iconic windmills of the Cycladic islands of Greece, the elevated entrance acts as a transition into a world of dining excellence. Similar to the architecture found in the island of Milos, the restaurant showcases a sense of exteriority and breeziness that brings together the sophisticated outdoors with a sense of brightness. - Formula 1 Singapore Grand Prix on track to halve its energy emissions by 2028
23 July 2024, Singapore – Race organiser Singapore GP Pte Ltd (SGP) is on track to halve its energy emissions from the Formula 1 Singapore Grand Prix by 2028, as set out in an Environmental, Social and Governance Report released in 2022. In the 2023 Impact Report, total emissions arising from event operations directly under SGP’s purview and control within the Circuit Park’s patron experience zones at last year’s F1 night race amounted to 1880.80tCO2e, a reduction of 20.7% from the 2022 baseline within the 5-month reporting period.[1] This excludes all freight, logistics and travel by Formula 1 and teams. Energy remains the event’s main source of emissions. Scope 1 direct emissions from the combustion of fuels accounted for 46.56% of total emissions, representing a decrease of 40.97% from the previous year’s Scope 1 emissions in absolute terms. This was mainly driven by a successful trial to substitute the use of diesel to fuel power generators with low-carbon alternatives, amongst various other energy management initiatives. In 2023, biodiesel, including Hydrotreated Vegetable Oil (HVO), was used to power a select number of generators in the Circuit Park, along with the increased use of B100 biodiesel. SGP will continue to gradually increase the use of green fuels across the generators this year as planned, with the view of implementing it in all generators by 2028 to reduce energy emissions by up to 52%. “We made a commitment in 2022 to work towards halving our energy emissions by 2028, and I am pleased to report that we are moving in the right direction towards this target by focusing on energy reduction, increasing the use of green energy sources, and utilising Renewable Energy Certificates for unavoidable emissions. We will continue to explore other measures to minimise the Formula 1 Singapore Grand Prix’s GHG footprint, and build on all other aspects of our ongoing sustainability initiatives,” said Sasha Rafi, Director of Sustainability, Singapore GP Pte Ltd. “At F1, we're on track to achieving our Net Zero by 2030 commitment and we are able to do this with the support and action of our promoters. The Singapore GP are not only supporting us in achieving our goals but also have in place their own commitments. Data, innovation and investment are key components to help us reach our targets and share best practice across the sport,” said Ellen Jones, Head of ESG at Formula 1®. In addition to energy management, SGP is also continuing with its previously announced drive towards sustainability through initiatives under its three key pillars of reducing carbon footprint, taking a holistic approach to sustainability, and creating positive impact in the community. In recognition of SGP’s ongoing sustainability efforts, the world motorsport governing body Fédération Internationale de l'Automobile (FIA) awarded SGP the highest rating of three stars for its Best Practice in its Environmental Accreditation Programme last year. This achievement followed the one-star rating that was previously attained. The Formula 1 Singapore Grand Prix becomes the first street circuit to gain the accreditation, with events in Miami, Monza, Imola, Spain, Austria, Great Britain, Belgium, and Abu Dhabi also FIA three-star accredited on the F1® calendar. In addition to converting all the track lights to LED, as well as the installation of solar panels on the F1® Pit Building last year, several promising initiatives will continue to be implemented or enhanced this year. Custom-built water-efficient container toilets will continue to be deployed after a successful debut last year, which was estimated to save approximately 129,600 litres of water, enough to fill more than 600 average-sized bathtubs, over the three-day race weekend. Used cooking oil[2] will also be collected and recycled into biodiesel, and SGP will increase the switch to sustainably sourced tableware throughout the Circuit Park. See Annex A for Our Impact Numbers. Fans can also do their part and contribute to a brand-new initiative for the FORMULA 1 SINGAPORE AIRLINES SINGAPORE GRAND PRIX 2024 this 20 to 22 September. SGP has partnered with Plastify, a local startup which recycles plastic waste into functional goods, to produce official race merchandise. As part of this collaboration, local residents are invited to drop off used Type 2 High-Density Polyethylene (HDPE2)[3] and Type 5 Polypropylene (PP5)[4] items such as body wash, detergent, and shampoo bottles that are clean and labelless at SGP’s upcoming #RevUpSg Festivals at Suntec City, HDB Hub, and One Punggol. Over the race weekend, patrons in Zone 1 of the Circuit Park can also have a go at making mementoes out of the recycled plastic that has been collected. Along came the Cod Fish, an exquisite plate ofCod that is wrapped in Parma Ham, yummy and rich Lobster Bisque and Garlic-Butter Sautéed Spinach; absolutely marvelous! The Beef Cheeks is well savored with a 24-hour Braised format, and we can taste the succulence of this amazing dish that is gently cooked to perfection with mashed Japanese Purple Potato and Kale.
